Smitten Kitchen has a delicious one, I think it's called "jacked-up banana bread" or something like that.

My sister swears by this and I've had it and it is sooo good (and I don't even like banana bread that much!)
Janet’s Rich Banana Bread
Adapted from allrecipes.com
Makes 1 9x5 loaf
1/2 cup butter (1 stick), softened
1 cup white sugar
2 eggs, room temperature
1 tsp vanilla extract
1 tsp lemon juice
1-3/4 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 cup sour cream
1/2 cup chopped walnuts
2 medium ripe bananas, mashed (should equal 1 cup)
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
With a mixer, cream together the butter and sugar. Whisk in the eggs, vanilla, and lemon juice by hand; mix well. Combine the flour, baking soda and salt; stir into the butter mixture with a spatula until smooth. Finally, fold in the sour cream, walnuts and bananas. Spread evenly into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.

Question for all the bakers out there: I made a banana bread last night and it baked a bit uneven. The bottom is cooked and the top is cooked but the center is a little wetter (though it seems cooked). If I had left it in longer I think it would have started burning. Is there anything different I could have done?

@sunny: I've heard it helps to cover with foil.
