Do you have a favorite breakfast casserole recipe? I love making them for a quick weekend breakfast. I made one with crescents, sausage, cheese and eggs the other day and it's amazing, and so simple! I would love to hear more ideas!

1lb sausage browned. 6 slices bread torn. 6 eggs. 2 C milk. 1T dry mustard. 2 C cheese.
Combine all the night before and place in a 9x13...bake at 350 for 1 hour...amazing!!! I love it!
I also have a blueberry french toast recipe I am trying to locate...its hawaiian rolls, eggs, heavy cream, 1C blueberries and some nutmeg - sit over night. In the AM bake, while baking combine 1 stick butter and 1 C brown sugar. After 45 mins of baking drizzle with the sugar mixture, pecans and 1C blueberries then bake for another 15 mins...its like dessert for breakfast!

I use 4 c. Red potatoes instead of the home fries. Also, 10 eggs to make it hold together better. Yum!

Ingredients:
12 eggs
2 cups milk
12 ounces grated cheddar cheese
1 pound sausage
1 pound bacon
8-10 frozen hash brown patties
Line an large baking dish with frozen hash browns. Sprinkle hash browns with fried, drained, and crumbled sausage and bacon. Whisk together eggs and milk; pour over meat and hash browns. Top with grated cheddar cheese. Best if prepared the night before and refrigerated. Cook at 350 degrees for 45 minutes to 1 hour until set/slightly brown on top.

I love these kinds of make ahead breakfasts, I plan to do several when my inlaws come to visit in a few weeks!
I also do frittata when I have no idea what to cook and need to use up veggies.

This one is our favorite:
1 package shredded hashbrowns
1 package of shredded cheese
16 oz cubed ham
1 cup milk
8 eggs
pepper
hot sauce if you want
throw in veggies: peppers, onions, ect. if you want
put hashbrowns at bottom, mix the rest together and pour over top. bake and serve! Bake at 375 for 45 minutes

@FaithFertility: it really is! If you want to so super easy, buy the hash browns that have the peppers and onions already frozen! I make this for dinner some nights too when i'm feeling lazy
