My friend usually does brunch parties for her kids. She usually does 2 different egg casseroles, bagels, donuts, muffins, fruit, and lots of bacon. Depending on your preferences, you could add mimosas and bloody marys.

We had a brunch for our DD's second birthday. We had:
Quiche (3 different flavors)
Home fries
Cut fruit
Cut veggies with hummus
Bagels (with butter, jelly, cream cheese, and peanut butter)
Donut holes
Sausage
Orange juice
Apple juice
Coffee
Tea

We did a bagel brunch, with fruit salad

For a brunch, I always like a sweet option, either a bundt cake or yogurt parfaits.
I am also a waffle fan, I would work in a way to serve them too.

I just did this for my 3yo's birthday! We had about 6 children and 15 adults. We served:
mini crustless quiches (two kinds)
smoked salmon with cream cheese, capers, red onion and pumpernickel bread
vanilla greek yogurt with granola and berries
plain and chocolate chip pancakes
orange juice
mimosas
coffee
juice boxes
(We also made fruit skewers and served crudite with hummus, but they were barely touched. Everything else was eaten though.)
I prepped the ingredients for the quiche the day before, assembled them in the morning, and put them into the oven after the party started. Everything else was set out in advance except for the pancakes which I made during the party.

Make your own sandwiches (rolls, lunch meats, cheese, condiments)

Sausages
Chips

Fruit, egg casserole, French toast casserole, donut holes, turkey and regular bacon, home fries or hash browns, and Cheerios for the really littles and Uber picky kids. Mostly breakfast and easy to assemble and throw in the oven because lazy haha.

We did a brunch themed party for DD's first birthday party. We had food catered from a brunch restaurant down the street.
We served: mini waffles, breakfast potatoes, french toast sticks, breakfast burritos, fresh fruit, garden skillet.
We brought our own coffee, orange juice, water, mini breakfast pastries like muffins and scones.

Mini bagels with strawberry cream cheese
Crockpot egg casserole - a meatless kind where you put in cheese and potatoes and maybe some peppers or spinach.
Bacon or sausage on the side.
Fruit salad
Milk
Juice boxes
Coffee
Mimosas
Then in lieu of birthday cake I would serve sprinkle donuts!
