Yep, just boil a chicken carcass! I usually roast a chicken and we eat half for dinner one night, then pick it clean and boil the carcass for stock, and make soup using the stock and the rest of the chicken the next day! You can throw onions/carrots/celery/bay leaves in when you boil it too.
I think it has more true flavor and less of a salty taste.

I like Kitchen Basics brand for stock, they have an unsalted one that is quite good.
I make stock when I've roasted a chicken. I just put it in a pot with an onion, carrot and celery and I put it on the stove at a very low boil.

Yesssssss. I use an AMerica's Test Kitchen recipe. It is phenomenal. I use an entire cut up chicken (about $9 at the store, pre-cut....i ain't sawing through bones) and probably 10 cups of water plus chopped onions, celery, carrots, bay leaves, garlic, thyme, and peppercorns. Cook on low for a few hours with the lid on, drain out veggies, refrigerate, scrape the fatty top off, and shred the chicken into the soup and add fresh veggies to make chicken soup. The chicken would be great to use in enchiladas or anything else, but i primarily make stock when i want chicken noodle soup

I do! I get a whole chicken at the farmer's market, boil it and make soup and then slow boil it to draw out the nutrients for the broth. Then I can freeze it for more soup.
Or I roast the chicken then boil the bones. It is really healthy and so so so so delicious.

we have when we have enough bones/parts. we just use the bones & insides and throw in whatever veggies we have. then strain.

I make it for Vi to drink. I buy an organic rotisserie chicken, shred the meat and freeze, and boil the carcass for a few hours with carrots and onions. I freeze the broth and give it to her in a sippy.

and it is awesome. I just put my chicken bones/fat, etc. in the crockpot and let it cook overnight. Easy peasy. I also use her recipe for crockpot chicken and it is really good, too.

Yes – we make our own chicken stock, veggie stock, shrimp stock and sometimes beef stock (we rarely use beef stock, so I don’t make it very often).
When I’m cooking, veggie scraps either get saved in the freezer or composted and when I have a full freezer bag of veggie odds and ends I throw them in a pot with a whole chicken (skin removed for lower fat content), some S&P and herbs. A few hours later, strain the stock, save the meat and you’ve got tons of chicken stock! Costs about $5-7 total, especially if you can get whole chicken on sale.

Yes! I've found that making broth in the pressure cooker is hands down the best way. And it's done in an hour.

After I roast a chicken and pick it clean, if I'm not ready to make the stock yet, I stick that baby in the freezer. Whenever I wanna make a stock, I pull it the carcass out of the freezer, throw it in the Dutch oven, pour some water in there, sometimes with extra aromatics, sometimes not. So much nutrition in chicken stock, and so delicious!
I usually use the stock to make other soups, or I add some other stuff (mushrooms, soy sauce, Korean anchovies, kelp, onions, garlic) to make Korean soups or ramen, etc. YUM!

If we've cooked something and have bones left I'll make broth, but I really like Knorr vegetable broth.

Yup, but I do use canned as well. But if I'm making chicken soup I always make my own broth!

I just barely made some beef broth. I boiled the bones for 48 hours. Holy cow it is good stuff!!
