honestly, super easy - put the chicken breasts in and cover with sauce of choice. italian dressing, ranch, bbq, etc. then either shred or just serve whole. not super exciting, but really easy.

Chicken, taco seasoning, ranch seasoning, 1 can (14oz) of chicken broth. Low for 8 hours. Shred. Instant (delish) tacos.

Chicken breasts, a jar of salsa & a can of black beans. Shred chicken once it's cooked & serve with tortilla chips & any other nacho toppings you like.

@travellingbee: It's SO EASY and delicious. I usually cook it over veggies (carrots, onions, celery, etc). If I get a big enough chicken, we eat it for dinner that night, then I shred some for casserole or soup, then I also eat it for lunch at work that week. It's amazing!

I put the chicken in and cover with buffalo sauce. Then shred the chicken when it's done and eat it on sandwiches like pulled pork.

Two that I use all the time:
chicken+cheese soup+cream of chicken soup. Serve over rice.
chicken+diced tomatoes+dried basil, salt, and pepper. Serve over pasta

chicken + marina sauce + veggies of choice. Low for 6-8 hours. Boom, done!

chicken + can of salsa + cream cheese - use as enchilada stuffing or serve with rice
chicken + can of coke + BBQ sauce - shred and use for sandwiches

1 lb chicken, 3-4 bell peppers of any color cut into strips, an onion or two, and a packet of taco seasoning. Put the bell peppers and onions on the bottom, cover with chicken, and then sprinkle taco seasoning on top. Cook for 6-8 hours. Makes awesome chicken soft tacos! We garnish with cheese, sour cream, guac, whatever you like.

i have a tendency to just dump things in the crockpot & walk away hoping for the best today i threw in some chicken breasts with taco seasoning, a jar of salsa, some hot sauce, pinto beans, and a can of southwest seasoned corn with peppers. i plan on serving it with rice for dinner and then in tortillas for lunch.

Similar to everyone else - I take frozen or fresh chicken, cover with taco seasoning, and add dried black beans, onion, and some water. Cook for 6 hours, shred, and that goes into enchiladas. Or, add corn, tomatoes, salsa, cilantro, whatever other mexican kind of flavors, cook, and then put that over tostadas or corn tortillas.

@sarac: Do you measure the water at all when you put in the dried black beans?

@MrsBrewer: Nope. I just cover them and add more if they seem dry. If I were just making beans, I might be a little more precise. But these just get added to seasoned onions and peppers and other enchilada things, so a little excess liquid is ok. If I'm making them for tacos, I just drain any excess.

@stargal: i'm so glad you liked it! i stole the idea from a friend several years ago. it's so easy and then i freeze individual portions for my DH's lunch with the leftovers. i love easy meals!
