I'm exhausted these days and cooking and meal planning is really taking it out of me! Please post any easy dinners you can think of. Extra points if a picky toddler might eat them too.

I'm eating fried eggs on avocado toast right now! And maybe just scramble them for your kiddo.

Make your own pizza.. I get the dough balls from the grocery store, add whatever pasta sauce I have on hand, top with whatever you want (I usually do mushrooms, bell peppers and spinach) and cheese. So easy! I seriously do this about once a week.

I made a really easy chicken recipe tonight. 2 tbsp. mayo, 2 tbsp. Italian salad dressing...mix them together and brush on top of chicken (about a pound). Bake in the oven at 375 for about 20 minutes. I made potatoes (microwave for 2 minutes and then cut up and bake with the chicken) and corn on the cob (microwave for 1.5 minutes per ear) with it.

I used to boil pasta, and throw in some broccoli towards the end of cooking time. Drain, stir in cooked shredded chicken, pasta sauce, mozz cheese (sometimes spinach too!)

My easy dinners are usually chicken legs or thighs baked at 350 degrees. I season with salt, pepper, and cajun seasoning. But just S&P is good too! 5 min prep, then forget!

We had BLTAs tonight. Yummy and easy. And my LO will at least eat the bread, tomato, and avocado.

1 bag of frozen ravioli, 1 jar of spaghetti sauce, 1 bag of cheese. Layer, cover with foil, and bake at 400 for 30 minutes. Remove foil and let cheese brown for 15 more minutes.
If you use fresh tortellini, its even faster - 20 minutes to bake, then 10 minutes to brown the cheese.
Add spinach, mushrooms, cooked sausage, pepperoni, leftover chicken, whatever. Sub alfredo sauce if you want.
