Sometimes we have them as a meal topped with broccoli and cheese.
I also like them as a side with sour cream and chives.

I like them with cottage cheese. My in-laws (who are British) do baked beans and shredded cheese and call it dinner.

@Willow: same.
We don't often eat them as a side dish. If we're going to eat them we make a meal out of them and they are indulgent! I bake them, cut them in half and squash each half sort of flat. Then put on butter, salt, and pepper. Add shredded sharp cheddar and chopped bacon. Then broil until the cheese is bubbly. Then top with chives. DH adds sour cream too.

Sometimes I'll make potatoes as a quick & easy meal- we have them topped with fried bacon, onion and pineapple. Then melt cheese on top of that. Then top again with coleslaw. Not the most nutritious meal (plus it sounds like a random combo) but its delicious and a real comforter in winter!

Ooh, another one that we made in high school food tech was potato carved out like a bowl, then mix the insides with baked beans, cheese, capsicum (peppers?) and parsley. Then melt cheese on top and stick in a couple of corn chips out of the top to eat it with. Again, another really random and unhealthy combo but so tasty!

Also carving out the insides, filling with spinach dip and shredded cheddar and then baked long enough to melt the cheese. It's delicious!

One thing my college roommate did that I adopted was getting a potato with everything on the side with steak, eating the steak slathered with the butter, and putting the A-1 on the potato after mixing it all up with the sour cream and chives and bacon if they have it. So good!
