I would do something by either Howard Zinn, Bill Bryson or Ron Chernow.
I also really liked Hidden Figures, that's a great one for a woman entering science.

Bill Bryson is a good rec, especially if the grad likes history or plans to travel.
I also like to give The Gift of Fear to young people heading off to college.

I know this isn't quite what you are looking for, but what about a bullet journal (in addition to a real book)? I always feel so purposeful when I can write down my goals on paper.

One of my most cherished graduation gifts (probably the only one I still have) was a beautiful hard cover book full of Shakespeare. I love it... of course I love Shakespeare but it's a beautiful book and I've always kept it safe.

Another idea is a cookbook! I really like Cookwise, which is more of a science of cooking book, but there are so many out there now.
