Just as the title says. I just bought all new towels in white and wondering how often I should bleach vs regular washing? Every time? Every other? Only when visibly needed?

Every wash. I do one load of whites a week, my husband's tee shirts and the towels.

I use non-chlorine bleach, and only every other wash, if that. If you use chlorine bleach every time you'll destroy the fibers faster than necessary.
Also, use a lot less detergent than you think you should (like half of what the directions on the detergent says). Detergent buildup is part of what makes whites dingy.

I don't trust DH with white towels (lol), so I only use ours for guests. I probably will only bleach when they visibly need it.
I only bought them for staging our old house, but I'd hate to not use them now that we have them.

I don't bleach but I do soak...I use washing soda and hydrogen peroxide on all our whites. I soak them in that plus a small amount of detergent and hot water for at least 4 hours, then wash like normal. I do this probably every other time I wash our whites.

Never... and our white towels are looking super grungy. But I don't trust myself with bleach! I'll end up ruining something!

Never. But we don't usually buy white anyway, just cream. Our landlord turned condo seller told us we couldn't use bleach in our washing machine. I don't actually know why but I've stuck with that. We don't even own any bleach now.
If certain things look grungy I do soak in oxy clean... Or throw them out.

Never? I probably should (DH's undershirts especially need some help), but I'm very leery of harsh chemicals. I normally don't even keep bleach in the house. I may try what @Portboston said though. I need to do something!

Never, I wash whites with white and no other colors and everything has stayed white thus far.

Never have but we have a septic tank so I don't want to use bleach. They are mostly guest towels and don't get used more than a few times a year anyway.
If I was going to bleach them, I would take the load to the laundromat.

I usually bleach every time. We only have white towels (Inc hand towels and washcloths) and they are washed once a week with our other whites. I alternate between chlorine bleach and oxygen bleach. The towels are four years old and look brand new.
