Butternut squash soup, side of roasted Brussels sprouts in pancetta with dried cranberries and balsamic (very easy to make)

Turkey sandwiches with cranberry mayo

Beef stew with homemade cheesy biscuits

I always like the "make your own" route

Baked potato bar
Mashed potato bar
Mac n cheese bar
Salad bar with various soups
Sandwich bar (could do a lot with this rather than just cold cuts. Italian beef, pulled pork, grilled chicken, etc.)

All can usually be done ahead of time

And taco bars are not just for Cinco de Mayo. They are just plain delicious
