I have gestational diabetes so I'm kinda eating paleo!
I usually eat a hard boiled egg, an avocado & 1-2 string cheeses.
I am supposed to have some carbs so I'd sub one of those items for whole wheat toasts w/ peanut butter.

On the weekends, cook a big batch of peppers, onions, tomatoes, and zucchini and keep it in a tupperware. Buy a bag of cooked bacon bits (we buy a giant bag at Costco and leave it in the fridge).
Then on a daily basis, just heat up a scoop of veggies and a sprinkle of bacon in a pan, add a few beaten eggs, spinach if you want, and enjoy with a few slices of avocado or salsa with a mug of coffee.

Why not some meat? Protein will help carry you a long ways (increasing your protein leads to weight loss b/c it keeps you fuller longer)....i used to do eggs and chicken sausage links. Avocados are also great. I also like Civilized Caveman's banana bread, egg muffins/crustless quiches, coconut flour pancakes...scotch eggs are also amazing....

Eggs and chicken sausage links, with a side of diced sweet potatoes was my go-to when I was eating Paleo.

I'm not a huge breakfast fan but I try to cook it on my days off. We do half an avocado with an egg in the middle then topped with salsa and cheese. Bake it in the oven for like 15 mins I think?
I also like a poached egg topped with a quick homemade salsa ( tomatoes, red onion, jalapeƱo, and cilantro ) and put the egg and salsa on a bed off chopped lettuce. ( I also like mine on a wrap)
Sometimes we do ground beef with taco seasoning and then scramble some eggs into it.
We add turkey sausage or bacon to all of them as well

We are about 90% Paleo at my house! I've been battling morning sickness so breakfast is a bit of a struggle. This morning I had 3 scrambled eggs, sliced beef summer sausage spread with goat cheese (sometimes considered Paleo, depends on who you ask) & topped with red delicious apple slices. I also like homemade paleo granola (tons of recipes on pintrest! ) & coconut milk. Sweet potato hash with eggs & sausage was a favorite of mine for a while as well. DH likes baked butternut squash & apples with sausage. I get all my ideas from pintrest usually. lol
Oh yeah, plantain pancakes are a weekend favorite around here!

I think my breakfasts have always been toast or cereal so I'm having trouble thinking outside of the box

Are you avoiding dairy 100%? I've been eating cream cheese "pancakes" this week to try and simulate carbs (I'm low carb not paleo) and they are filling the void.
