My gym is having a pool workout and potluck picnic this Saturday, and I need to bring some kind of dish to contribute. A lot of the people there try to follow a mainly paleo diet, and I'd like to bring a dish that's paleo-friendly, but most of the paleo recipes I know and use aren't really suited for sitting outside or in a cooler for a couple hours and then feeding thirty people.
Can anyone suggest a good picnic side for a large group that's both easy and paleo-friendly? I could always just grab some meat and marinate it overnight and bring it to toss on the grill, but I think there will be a lot of that anyways, and so I was hoping to do a side dish or even a dessert. Any suggestions?
