I make this a lot - it's SO good! If you shop at Costco, their rotisserie chicken is the perfect size and flavor to make this soup with. We have the chicken for dinner one night, then I shred the rest off for this soup.

my 2 year old LOVES soup. it's weird. lately every weekend we'll make a crockpot of soup and then eat leftovers the rest of the week. recently we had potato soup and broccoli cheese. i think this week we're going to make beer cheese soup.

I didn't use carrots because I only like them raw...instead I subbed in squash &zucchini & I also added a can on diced tomatoes. I'm thinking of sneaking us more veggies next time because all you could taste was creamy, cheesy, potato-y goodness!

I made a "healthier" taco soup last night and it was amazing and super easy.
-1 lb meat of choice, browned (I've used hamburger, ground turkey, ground chicken and ground sausage before)
-1 package frozen pinto beans
-1 package frozen kidney beans
-1 package frozen corn
-1 small container frozen winter squash puree
-1 pack organic, low sodium "taco" seasoning
-optional "ranch" seasoning powder
-coupla tablespoons tomato paste
Just brown the meat in a stock pot, then throw in the frozen beans, corn, and butternut squash, add a couple of cups of water, stir in the taco seasoning to taste. Stir in the ranch seasoning to taste (I skip this now, since LO can't have dairy) and let simmer for 20-25 minutes or so.
The butternut squash gives it a really rich and creamy texture but adds no taste.
So delicious. I made corn bread muffins to go with it. It's a junk food dinner that still has a vegetable.

Gazpacho. I got DH a night out to a Spanish cooking class for his birthday, and we recreated it at a dinner party a few days ago. I was never a fan of gazpacho until then!

I freaking love soup. I’ve been making a big batch over the weekend and then brining it for lunch every week. We've also have avgolemeno weekly for a while now with a big kale/arugula salad.
Sausage/spinach/lentil has been a go-to for a few weeks now for lunches. We also had cream (very, very little cream) of asparagus with roasted asparagus and garlic last weekend, as well as butternut squash with pancetta. I also recently made a couple kinds of chili, too.
I try to stay away from pasta in soups, or soups with a lot of heavy cream, cheese, etc. Soups can easily become calorie bombs!

Spicy Black Bean Soup
Ingredients
2 cans black beans (unseasoned)
1/2 jar HOT salsa (or whatever level of spiciness you prefer)
1.5 cups chicken broth or stock
1 small carton sour cream (I think that's 4 ounces?)
shredded cheese to garnish (I prefer Colby Jack)
Directions
1. In an electric food processor or blender, combine beans, broth, salsa, and sour cream. Blend until smooth.
2. Heat the bean mixture in a pot over medium heat until thoroughly heated.
3. Ladle soup into bowls and top with shredded cheese.

I'm obsessed with soup. It's delicious not to mention so easy to double for leftovers. Chicken tortilla is in my weekly rotation. Another favorite is Olive Garden's Pasta e Fagioli and breadsticks. They're pretty easy to recreate at home.

In the past 2 weeks I've made chicken noodle, butternut squash chili, loaded baked potato soup, beef vegetable with barley...Probably will make cock-a-leekie this weekend. I always freeze a bit for later every time I make a batch of soup.

I was just going to come on to say that I made the soup @MrsF: linked to this past week. I used the pressure cooker to try it out this time and it was so easy - squash, chicken broth, and onions pressure cooked for 20 minutes then blend with immersion blender!

We get a Costco Rotesserie chicken and I ask the DH to save the carcass for soup. I've made chicken noodle, turkey noodle, minestrone, chicken and rice. I need to think of some others. I do have chili and now Italian wedding on my list to make.

A favorite in our house is red lentil and barley soup. We add a lot of veggies to it, spinach, kale, celery, carrots, etc. it's very hearty and yummy.

Taco soup!
1 Can of Tomato sauce
1 lb ground turkey (browned with onions)
1 can of fire roasted diced tomatoes
1 small can of green chilis
1 can corn
1 can black beans
1 pack of taco seasoning
Top with tortilla chips, sour cream, cheese, cilantro, avocsdo, etc. Etc. Etc.
So easy and so delicious. Also works with 1 lb shredded chicken.

I just made a double batch of this Squash Soup with Curry and Coconut. But made it less spicy for LO. So yummy!
