I saw the post title and planned to recommend the "The Kids Book of World Religions" - I really like it, but I don't think that's really what you are going for
My nieces/nephews have "God Gave us Easter" and I think the illustrations are beautiful.

I love "Petook" by Caryll Houselander (pictures by Tomie de Paola) and so does my son. I think it's out of print now; I tracked down a used copy. It's the Easter story told from the perspective of a rooster, Petook. Sounds odd, but it is a nicely nuanced version of the story for little kids and the pictures are top-notch.

They're a little more babyish, but we love Virginia Esquinaldo's What Did Baby Jesus Do? and Baby Come to Church.

@photojane: We have this one in the board book format and we love it! We read it to our 1-year-old regularly and I think it'll be a great tradition to read it the next few years. Very simple but not over simple and biblically-based, age appropriate telling of the story with good illustrations. I have "The Story of Christmas" from the same collection as well.
