We continue to look for a church, and are going to visit a UU church this weekend. I've done some reading and I like what I've read, but am a little unclear on a few things. I'm assuming they don't do communion. Is that right? How do they celebrate or recognize holidays, and which ones?

It's really going to depend on the church, so you will have to visit- most likely they will be very welcoming of new visitors and have lots of info for you! I've been to one that did Christmas and another that did solstice. No communion. These are the common beliefs;
The Inherent worth and dignity of every person
Justice, equity and compassion in human relations
Acceptance of one another and encouragement to spiritual growth in our congregations
A free and responsible search for truth and meaning
The right of conscience and the use of the democratic process within our congregations and in society at large
The goal of world community with peace, liberty, and justice for all
Respect for the interdependent web of all existence of which we are a part
