@lovehoneybee: mmmm can I come over for Mac n cheese? If my LO ever out grows his dairy allergy it's the first thing I'm making! (After he gets used to it again, Obvs).

I just found an app that might change my life: copymethat. It's free and copies recipes from anywhere, meal plans, shopping list, etc.
I'm just starting to get a cooking groove, just barely. Here's the plan:

We don't plan ahead usually for dinner, but can tell you what we've got made for breakfasts and lunches this week (and dinner tonight!), since any of the lunches or breakfast could work as dinner:
Dinner tonight: steak (DH) and salmon (me) and salad with avocado and goat cheese.
breakfasts: egg bake with hot sausage, mushrooms and onions
lunches: 2 choices - 1) winterberry greek salad (winterberries, greek olives, pepperoncini, hard salami, feta and red onion) with baked lemon chicken; or 2) southwestern quinoa salad (quinoa, red onion, cilantro, jalapeno, black beans, avocado and cherry tomatoes) with bbq chicken.

I cook usually 3x a week, and do leftovers the other nights. Or we eat one night at the IL's. DH cooks on the weekends.

-Steamed artichokes with some sort of packaged vegan "meat."
-Mulligatawny soup (slow cooker.)

@lady grey: It's nothing special, and I don't really have a recipe...I bought some spinach chicken sausages from my local store (store brand), and I'm probably just going to toss them in a roasting pan with diced sweet potatoes, apples, garlic, and some sort of seasonings.

@IRunForFun: @gotkimchi: The chicken dish was pretty basic, nothing special. I liked the pops of lemon. I definitely didn't salt it enough, but that's on me. And mine wasn't very creamy. It was just a simple/easy/basic meal. It went nicely with a spinach salad, though!

Wedneday: tilapia, with what I don't know, maybe that orange salsa!!!
