Tortilla soup, hands down. I prefer the broth-y tomato based kind to the cheese soup kind, although they are both delicious

I have never been a big soup fan, but this year all of a sudden I am loving soups! Even making some...!! The kids REALLY love the Korean soups my mom makes so I have to start making those too.

I love butternut squash (and any variety of it), broccoli cheddar, corn chowder, of course pho... anything that's not tomato based, really!

But I do love creamy tomato to dip my grilled cheese in.

I love soup...pretty much ANY soup.

As far as western soups go, I love anything creamy/cheesy! Cream of mushroom, broccoli/cheddar, clam chowder, cream of potato, etc!

I love soup - any soup! I especially love chunky soups with lots of veggies.

But some faves include: French onion, clam chowder, cream of broccoli, and regular veggie soup!

I love all of the delicious and fatty cream based soups like lobster bisque, cream of crab, cheddar broccoli, clam chowder, fish chowder, any chowder. Also, I've recently become a fan of Italian Wedding soup.

I never really liked broth based soups before but I have started liking them now that I am eating them more often with a toddler in the house. They're so easy if you have the right ingredients in the house.

I love tomato, Italian Wedding, Chicken Enchilada, chicken noodle, egg drop soup, clam chowder, broccoli cheese, vegetable beef....I could keep going but I'll stop there

Vietnamese soups are my fave, because I grew up with them. Pho, bun bo hue, mi hoanh thanh, canh bun, bun rieu, canh chua, I love all of them!

I also love NE clam chowder, zuppa toscana from OG, baked potato soup, Thai boat noodles... mmmm.

I used to make a vegan potato kale soup all the time when I was broke and it is realllllly delicious. Its just a pot of water with a LOT of garlic (4-5 cloves chopped at least), some chopped up russet potatoes, and a head of kale with salt and pepper. The key is to add several shots of vinegary hot sauce (like Red Hot or Crystal or Texas Pete's) to your bowl. The kale and garlic make a very flavorful broth and the potato fills you up. I actually made it with sausage once and liked the vegan version a lot better!

I make chicken or turkey broth at least once a month (with my leftover bones/scrap that I save in the freezer) and make all kinds os soups with them (like today I have chicken and brown rice with kale)

Soup is hands-down my favorite thing to make!

Butternut squash (we served it at our wedding!), loaded baked potato, lentil, spinach sausage and white bean, chicken and dumpling, chicken enchilada, tortilla....

@autumnlove: I think you might get a little more fat and richness if you saute the garlic in some olive oil first!

DH who doesn't usually see soup as a meal, WILL eat hearty soups like chili if there's bread and salad (and dessert!). One soup he will eat for breakfast, lunch and dinner is my beef and vegetable soup. Its not a tomato-based soup - we like our's straight. It makes a TON and cooks in the crockpot beautifully (or in a big soup pot slowly simmered for 1-2 hours, or until the meat is tender). The weird part of this soup is that it uses some canned veggies. I eat frozen or fresh for just about everything, but they don't get soft enough! For some reason in this recipe, for me, it has to be canned.

1.5lb beef stew meat (I like to cube up chuck roast)
Water or beef broth
1 onion
1-2 cloves minced garlic (or a few sprinkles of garlic powder)
2 bay leaves
1 cup each carrot and celery, chopped
1 russet potato, cubed
1 can of peas
1 can of green beans (sometimes we add 2 - the soft green beans are so good in this recipe!)
1 can of corn
Salt and pepper
1/2 teaspoon thyme, optional

1. Brown the beef with a little salt and pepper (we like Montreal Steak Seasoning). You can skip this step if you're pressed for time - its still good.
2. Add all the veggies, bay leaves, and thyme.
3. Fill your crock or pot to the top with water or broth.
4. Simmer over low heat or on LOW until the meat is tender (1.5-2 hours on the stove, 6-8 hours in the crockpot).
5. Skim fat if needed. Season with salt and pepper. DH likes a few shakes of hot sauce over his bowl. Serve with hot bread!

I love soup! From different all sorts of cuisines, favorite is Pho! Also love Chicken noodle, sweet and sour, tom yum Thai, tomato basil, and French onion to name a few.

@HabesBabe: I LOVE all the soups you listed! I really want to learn how to cook all of that so my DD can grow up enjoy eating traditional Vietnamese food like I did but I am better at cooking American food.
