For Christmas Eve, my mom and stepdad have always done appetizer foods before/after church (sausage balls, crab bites, crudites, etc). Then Sister Schubert rolls for breakfast Christmas morning, and a more traditional dinner later on Christmas Day.
I'm spending my first Christmas ever with my in-laws this year, and DH says they do soups for Christmas eve (like a couple different kinds) with different breads and stuff. Not sure what they will do Christmas Day.

Gumbo for Christmas. It's a must have! My mom tried to change it up one year when they were living in IN and my sister and I mutinied. We have to have gumbo.

Thanksgiving is always a turkey. Christmas my DH dry ages a prime rib. Easter when we do anything is over at my ILs. Usually a ham.

Oyster stew and spinach salad for Christmas Eve. (Feel free to be grossed out. The stew is tradition here although an increasing number of our family members vigorously oppose it. I mostly like it because it's composed of excessive amounts cream and butter garnished with salty oyster crackers!) Christmas looks a lot like Thanksgiving for us: lots of everything! I feel more free to experiment in the kitchen on Christmas than on Thanksgiving.

We do thanksgiving all over again but with duck instead of turkey. I don't eat it though.

I'm trying to start a tradition of appetizers on Christmas Eve (we always have my husbands daughters for Christmas Eve only), I'll start it this year and see how it goes! For Christmas dinner we usually spend it with my parents and the past 2 years we've done a prime rib with all the traditional sides. When I was growing up it was always turkey and ham, one year we had king crab legs and oysters, yum.

The only time of the year we cook a turkey is at Thanksgiving, I was underwhelmed by this year's turducken, so I have no idea what I will try next year.
Other large cuts of meat at other holidays include ham, lamb, beef tenderloin and whole fish. Christmas Eve is seafood, which usually means Alaskan King Crab legs.

It's always a Honeybaked Ham in my family... no one dares to cook the ham themselves, just grabbing the tasty but pricey Honeybaked. I think it's worth it... more time to nibble on cookies!
