Taco Salad. Ground chicken, taco seasoning, salad fixings (or just lettuce), salsa, cheese for DH. Viola!

You have to plan ahead a *little* bit, but if you know you're going to have one of those nights, it's great. 3-4 chicken breasts, taco seasoning, ranch seasoning, one can of chicken broth. Crock pot on low for 5 hours. Shred it and make tacos, burritos, taco salad...whatever you have on hand!
Along the same lines, quesadillas. I always keep soft taco shells and shredded cheddar jack cheese on hands because if D is having one of THOSE nights, I can always get him to scarf a quesadilla!

Brinner. Breakfast for dinner.
If I'm cooking for just me (if DH is working) I'll make an egg sandwich (egg, cheese, and fried ham or whatever lunch meat we have on a bagel)
If DH is home, he'll do scrambled eggs and bacon or sausage and sautee some spinach in with the eggs.

But in reality, almost all our dishes are pretty easy because we're lazy and don't have a ton of time to make dinner after working, feeding Xander, and getting him to bed.
The easiest/least time consuming (although takes a while to cook) is our weekly BBQ Chicken Wings meal. Put chicken wings (we buy the mini party wings) in pan, coat with BBQ sauce, bake at 350. Set timer for 40 minutes and when it goes off, start water and cook egg noodles and heat up frozen peas or canned corn. Done!

Throw veggies (usually asparagus) in steamer (or sautee some baby spinach w/ garlic)

Bean tacos - a can of kidney beans, black beans, and diced tomatoes thrown into a pan to simmer for 10 min or so with a packet of taco seasoning. Just make some rice, throw rice and beans in shells, top with cheese and avocado and voila!

@MaryM: I'm with you on breakfast for dinner. Breakfast food is my favourite in general, and it's pretty quick and I always have stuff on hand.
Other than that, it's pasta... and I mean, boil some noodles and open a jar of sauce pasta. Garlic bread or a salad if I have the supplies and I'm feelin' fancy...

If I'm wanting to be somewhat "healthy" (hah!) I'll throw in peas and carrots to help soak up the saltiness.

@Synchronicity: Oh, good call. Pasta is our other quick one. Boil noodles and heat up some Prego. We often make garlic bread too, but only because I bought garlic butter, so I just butter some bread and put it in the toaster oven!

Rotisserie chicken!! I love Costco chicken so much.
All of my super easy dinners are not from scratch... frozen dumplings fried on the pan with rice from the rice cooker. Spaghetti and frozen meatballs with jarred sauce. Boxed mac and cheese. Grilled cheese. I guess that one is from scratch...!

@mrs. wagon: Yes! Costco rotisserie chicken for the win! And we just pair that with two kinds of veggies from our freezer, or I make "baked" sweet potatoes in the microwave.

I always cook ground turkey in bulk when i buy it once a month, and then freeze it in one pound portions, so our easiest dinner is tacos i can dump a container of frozen turkey into a bowl, microwave for a minute, and then turn it into taco meat on the stove in about 5 minutes while i prep the veggies and toppings. Super easy!
I also do pasta with meat sauce with ground turkey. 5-8 minutes to heat the sauce/meat on the stove while the pasta cooks. While they cook i can set the table, cook a veggie (usually salad or frozen broccoli) and have dinner on the table in less than 10 minutes.

Order/pick up pizza, or pasta with jar sauce.
We generally have rice and beans in the fridge, so rice bowls and/or burritos are a quick fix too.

We go with sandwiches and raw sugar snap peas - so quick and easy. I also do quesadillas on the Foreman grill with those steamed veggie packets you can just throw in the microwave.

Yes to the pasta! If I am feeling extra fancy, I will throw in some ground meat and some shredded veggies (zucchini or summer squash, onion, mushroom for example) that I have lying around and need to get rid of. I don't love having carby dinners, but it is cheap and easy!

It requires prep work, but once a month or so my husband and I make a big batch of frozen burritos to heat up on a night we don't feel like cooking. Now that it's cooling off I try to make double batches of soup/stew/chili to freeze for quick dinners too. Breakfast and frittata are some other quick faves too.

@Boheme: we buy store bought burrito tortillas and store bought refried black beans. We usually use ground beef or turkey and I cook it with salt, garlic and onion powder, tons of cumin and hot sauce to taste. We chop and cook bell peppers - usually red orange and yellow as well as onion. We grate a pound of cheese or so and then make an assembly line until we run out of something! We wrap in foil and put in big freezer ziplocks! We don't have a microwave so we cook them in the toaster oven at 400 for 40 minutes but they are good from the microwave too! Sometimes we use left over pulled chicken or pork if we have some around. It's super flexible- just make sure none of the ingredients are too wet! Hope that helps. It takes us about 1-2 hours from start to clean up, but we enjoy it
