I freeze it in 1/2 to 1 cup portions. I use white for risotto and red for tomato sauce.

Yes. I would put in ice cube trays, freeze, and then you have for future recipes.

@Mamaof2: I keep a couple white and a couple red on hand. I use them when the recipe is not really going to carry the flavor and therefore I dont care about the quality!

I actually cook with wine somewhat frequently enough that I buy a box of wine and keep it in my pantry. I know that doesn't help you in this instance but just a tip.
As others have mentioned, you can freeze it.

Yeah for the future, you can buy a bottle of "cooking wine" (in the baking section) in red or white, and just use as much as you need and keep it on hand.
