We're having friends over tomorrow and plan on grilling a boneless pork loin roast (assuming it doesn't rain, in which case we'll go with the oven!). I'm trying to think of a couple side dishes that feel kinda "summery" but still go with the pork... any ideas?? Bonus points if I can prepare some or all of it in advance!

This isn't necessarily summery, but its delicious, and you can make it in the crock pot! Just brown it in the oven right before serving.

Corn on the cob, potato salad, pasta salad, caeser salad. Since you are BBQing the pork loin, you can serve anything that would go with BBQ.

Here's some side dishes we've been loving with our grilled meat:
Green bean salad (blanched green beans, white beans, tomato, & Italian dressing)
Corn relish (corn, cucumber, tomato, basil, & balsamic vinegar)
Couscous with lemon or lime & cucumber/tomato inside
Potato salad -
Things that can be prepped in advance:
- Grilled corn: grill it in the husk and it is awesome. We rub it with butter and creole seasoning and grill for about 20 minutes, turning constantly.
- Sweet potato rounds: peel sweet potatoes, cut into 1" rounds, brush with olive oil, salt & pepper, and bake at 350 degrees for about 20 minutes, or until they pierce easily with a fork. We sometimes add cinnamon.

roasted carrots and broccoli, any type of salad, potato, grilled corn, garlic green beans!

You need to have SOMETHING with apples in it!! Looove the pork and apple flavor combo!

Ooohhhh here are some things we usually have with pork (not all at once obviously):
- mashed sweet potatoes
- roasted root veggies: sweet potatoes, parsnips, carrots
- caramelized brussels sprouts
- corn on the cob -
I like a homemade simple mango salsa with my pork
