We just put in granite...obsessed!
ETA: I totally though it was going to be outrageous but we shopped around and found out that the stone itself isn't too pricey, just the fabrication. I got 3 quotes and worked the one I wanted to work with down. SO happy we did it.

We have Formica (or whatever it's called now). We didn't want to put the money into granite for this house, not worth it because we plan to move in the next 5 years

We have Quartz for our Island and butcher block for our perimeter. We wanted soapstone but couldn't find a slab locally we liked.

the house came with plain white formica. i don't like it, but we'll hopefully be out of here in the next five years... don't think we'll do granite in the house we build either tho... quartz looks pretty!

Our current place has butcher block. We did Kashmir White granite in the kitchen we renovated together last year though. I loved the look of marble but wanted something with easier care where little ones could help/cook too.

@chopsuey: honestly? I like Quartz SO MUCH more than granite. My MIL has it and every time I help her with food prep or clean-up, I love taking on the task of wiping the counter-tops because it's beautiful. She has a pearly white (not my fave, but it matches her modern kitchen).

I see so much quartz on hgtv and love it. We have tileish looking counters original to 1958!

So I'm a research-aholic. We looked into all counter top material options when designing our kitchen.
I think this article talks very well about the differences between granite and Quartz. Personally, I'm not a fan of how granite looks so I'm already biased.

Biggest difference is maintenance and granite IS porous and it CAN stain. Whereas Quartz isn't and can't.
Also if you're choosing granite I would personally ask to specifically pick out which slab and where your counter is being cut from. Because of this allow plenty of lead time. Granite is super popular so I'm sure there are many warehouses that has tons of slabs. But if there isn't a slab you like it can be a few months before they get another shipment.
This is the reason why we didn't go with our top choice of soapstone. There's only two companies that carry it locally and the slabs that we saw were not to our liking for the size we needed cut.

We have quartz. My husband wanted it for the easy maintenance and I loved the look. We have black quartz in the kitchen and I love it, but it shows everything! I guess it forces me to keep it clean. We just put in quartz in the bathrooms too (a white quartz with slight marbling) and it shows so much less!

All white quartz. We have a very modern looking kitchen with high gloss cabinets and I love the sleek look of white quartz. Have to be careful with coffee and red wine stains though....

Soapstone. It is nice but probably wouldn't have been my first choice - it was already in the house. I love the look of concrete (saw it on HGTV once) but I've heard it is expensive.

The previous owners put in this weird acrylic solid surface called Hi Macs. It is nice that it is seamless but doesn't have the nice sparkle that Granite or Quartz has.

@locavore_mama: We LOVE soapstone counter tops. I really want them if/when we build. Helpful to know we should plan ahead! I think there are some good options locally, but we'll have to look into it more.
@shellio: do you not like them for aesthetic reasons, or something else?

Laminate (Formica) and I love them. So easy to clean, no maintenance, softer than stone (no chipped plates, bowls, etc). We chose seamless install with no backslash and I think it looks great.
We built our house and installed them with the plan of replacing down the line, but now I don't think I would waste the money.

We have granite. Love the granite, HATE the color. We have solid black, half-honed. They are truly beautiful. BUT they are the biggest PITA in the world to keep clean. Next time I am going for something more neutral.

@chopsuey: yes! We have been going back and forth and while we like the no-maintenance of quartz, we'd rather maintain with sealing every few years to avoid accidental stains because I've heard stories about scorching quartz with hot pots... no maintenance to avoid those kinds of accidents.
That being said, if we can't find a slab we like, we'll probably do quartz instead. The differences are so slight and we don't have a preference really based on look, so we'd rather save money... We're crossing our fingers to find a lower cost granite slab that will be cheaper than quartz, but we'll see!

We put in black quartz this summer before moving in. It is amazing, and was way more affordable than I had thought it would be.
