Popeye's cooked a deep fried cajun turkey for me and it has been thawing in my fridge the last couple of days. I work full time and host every year, so I can only manage it all by getting a pre-made turkey.

I'm doing a breast plate because its just me and DH and DS, but I'll brine it tonight and roast it tomorrow.

@winniebee: @chopsuey: mine is brining in a cooler with ice water in the garage. Doing Alton Brown's method of thawing and brining at the same time. I have a thermometer to make sure it stays around 40 degrees. I have done this for the past 4 years.

So easy, moist, and delicious! But this year during my first trimester food aversions I told my husband that if my mother in law wanted a turkey she had to cook it this year!

We bought a smoked turkey. I'm very excited about it. Just needs to reheat in the oven.
