Probably paninis with a side salad - a little fancier than sandwiches, but just as easy to make

@matador84: You can totally make paninis using a griddle or a frying pan - you just make it how you'd make a grilled cheese sandwich, so butter the outside of the bread slices and flip halfway through. If it's especially thick, you can use a kettle or smaller pot to smash it down.
I make a mean turkey, dill pickle, lettuce, cheddar cheese and dijon mustard panini on the stovetop!

I would probably do gourmet chicken burgers on pretzel rolls with pasta salad.
All purchased at our local grocery store, lol. If I didn't want to cook, I'd do ham and cheese croissants.

My go-to easy but seems fancier sandwich is smoked turkey with provolone, arugula/baby spinach, roasted red pepper hummus and either slices of cucumber or avocado (or both) tossed with lemon juice, salt, and pepper. It can be a wrap, it can be a sandwich, it can be on a croissant. Whatever it is, it always seems fancier and a hit with everyone I make it for. I would serve fresh fruit, potato chips, and have some La Croix to drink.

I do quiche too! The recipe I use is smitten kitchen's crust (or TJ's frozen pre-made if I don't have time), sautéed onions, sautéed mushrooms, whatever cheese I have, 4 eggs, a cup of milk with salt/pepper/ dijion mustard. Bake at 350 for 40-50 minutes. So, so yummy and you can sub whatever "toppings" you like- bacon, ham, peppers, spinach, etc etc.

Oh we also do tapas lunch around here a lot. Crackers, cheese, salami, veggies, hummus, nuts, fruit etc.

Last time I had a friend over I made steamed artichokes w lemon pepper dipping sauce and a hearty pasta salad (bow ties w white beans, sauteed peppers and onions, basil, olive oil and balsamic). Things I could make ahead and serve cold

A big yummy salad and grill up some chicken before, it's hot and a good salad always goes over well with my friends. Probably have some fruit or some kind of dessert to off set the healthy

@MrsBucky: I call that a Ploughman's platter! I would usually bake something (cheese muffins, brownies etc) then chuck ham, cheese, pickles, tomatoes etc and bread into a platter and say go! If kids are lunching with us then I might also make some sort of pizza scrolls or something similar.

I made this grape and poppy seed chicken salad today for lunch and it was sooo good! Swapped the mayo for whole milk Greek yogurt. Could not stop eating it!
