Following this thread. I am half Chinese (mom) and Vietnamese (dad) so I really don't know what traditional Chinese cooking is. We grew up eating a lot of Asian fusion cooking.

@sunny: Oh that makes sense... the picture on the website you linked does look like a very large bowl of beef noodle soup (without the noodles). :) Thanks! :)

I have made several recipes from this site and they were great.

This one can be done with a slow cooker:
http://en.christinesrecipes.com/2008/08/stewed-beef-brisket-in-chu-hou-sauce.html

This was also really good and super easy
http://en.christinesrecipes.com/2010/09/steamed-to-fu-with-minced-prawn.html

I don't cook a lot of Chinese dishes at home because it's so much easier to go out in our area. But MaPo Tofu is one of my faves to cook at home. Also, I slow cooker Braised Beef Stew soup and make noodles for our own Beef Noodle Soup.
I don't use recipes, but these look similar:

The book "The Wisdom of the Chinese Kitchen" has been a really good resource for me. Not only are their traditional recipes in it, it also gives the background of the dish as well.

So I'm Chinese and usually I say that anything I cook is Chinese food! :)

Here are my favorites though. Purely from memory...

Beef and broccoli

Beef (you can use chicken or tofu also)
Broccoli
Oyster sauce (I forget the name brand but we use the one with the panda on it... I will not be surprised if it's called panda brand)

Cut up the broccoli - boil or steam it till the right tenderness (took me a while to figure out how I liked it... I boil/steam if for about 10-15 minutes)
Cut up your protein and pan fry it. I usually do it till I see some scoring.

When those two are cooked add them together and then add two globs of oyster sauce (aka when you shake the bottle to globs come out, you can adjust for your taste)

Mix together for about 5 minutes. Done! Eat over rice.

Fried rice

Rice (left over rice is the best)
Anything in the fridge
Oyster sauce / soy sauce
Sesame oil

Put everything in a wok... except the sesame oil. Mix it up till everything is fried and hot... turn off heat and add a little bit of sesame oil and toss it one more time. Done. Eat and enjoy. :)

Soft rice

Rice (left over again is the best)
Anything in the fridge
soy sauce

Put rice in a pot with just as much water as there is rice. Boil for a while till it's soft and rice is to your liking (I like mine my rice to completely disappear and have just a white porridge but hubs like to see very big soft rice pieces). Add other stuff and soy sauce. Wait till it gets warm. Done. Eat and enjoy. :D

This may not be what you are looking for. Sorry if that's the case!

I cook at home quite often but I've found I don't cook much Chinese food. My mom's style of cooking was "as long as it's not raw" so I don't have very much exposure to delicious Chinese dishes aside from restaurant food.

Tell me, what kind of authentic Chinese dishes do you create at home? Bonus if you include a recipe!
