I do it the same way @sweetchic noted. Cute them up into little cubes or slices, cut soft tofu (cold, from the package after rinsed), put eggs on top, top with some green onions, dried bonito flakes (if I have some), drizzled with soy sauce and sesame oil mixture. I've loved this since I was little.

P.S. I've been warned by everyone though not to eat 1000 year old egg during pregnancy b/c of the preservatives.

@sweetchic: Does your mom cook the tofu before hand or just leave it raw?

@mrsjazz: It's a really yummy (acquired taste) preserved egg! I normally see them at the market as duck eggs but I think you can use any type of egg. The yolk becomes creamy and the whites take on a gelatinous texture.

My mom chops up 1 thousand year old egg, cubes one block of firm tofu, and then mixes them together with salt, white pepper, a dash of soy sauce and sesame oil.

I really like this preparation though never make it myself (because I never buy the eggs either, haha!)

What are other uses for thousand year old egg besides jook (congee/porridge)? I tend to shy away from buying them at markets because I typically don't make enough jook to use half a dozen. What do you use your thousand year old eggs for? Any recipes to share?
