<description>&#60;p&#62;I do a &#34;poor man's chicken parm&#34; that my husband loves... and he's a big meat guy.&#60;/p&#62;
&#60;p&#62;Just put marinara sauce in a baking dish, put raw chicken breasts in the marinara.  Sprinkle salt and italian seasoning over the chicken, then cover the whole thing with parmesan or mozzarella cheese.  Then we just boil some quinoa pasta and serve it over that and maybe a side veggie (frozen or canned) if we're feeling industrious.  You can put it together ahead of time and then just pop in the oven to bake at 350 for like 30-40 min or so.

<description>&#60;p&#62;My go to is super simple, healthy and delicious.  Thaw a chicken breast and cut into small cubes.  Saute until done.  Remove from pan.  Then saute any veggies you have on hand, fresh or raw.  I use a combo of mushrooms, artichokes, green beans, spinach, zucchini, yellow squash, broccoli, cauliflower.  Seriously, whatever you have on hand.  I usually have frozen versions of the above from TJ's.  Saute until done and add the chicken back.  Season with salt/pepper/red pepper flake/garlic and whatever seasonings you have.  In the summer we have fresh basil, thyme, rosemary and sage.  Otherwise I'll use dried basil/oregano.  I used to add a cream of mushroom soup to this for a sauce but have tried to get away from more processed foods.  I serve over pasta, quinoa, rice or on its own with a generous sprinkle of parmesan (my hugest vice!).  This is truly a clean out the fridge/freezer meal!

&#60;p&#62;Ham, turkey, mozzarella, roasted red pepper and basil with a little evoo on the outside of a soft cibata roll. Sometimes I add chili infused olive oil to give it a little kick. &#60;/p&#62;
&#60;p&#62;Another go to is creamy pesto, pasta and garlic chicken. I dip chicken into melted butter with garlic then dip it into an oregano, pepper, bread crumbs, cheddar and parm mix then cook at 350 for 30 minutes.

<description>&#60;p&#62;I make chicken taco soup. It seriously is so flipping easy cuz I just throw a bunch of stuff in a pot. And I totally switch it up based on what I have at the time. And it is pretty healthy!!!&#60;/p&#62;
&#60;p&#62;first a boil a pound of chicken breasts and then shred them.&#60;br /&#62;
then, I put the following into a big pot:&#60;br /&#62;
the shredded chicken&#60;br /&#62;
One can tomato sauce&#60;br /&#62;
One can fire roasted tomatoes&#60;br /&#62;
one can black beans&#60;br /&#62;
one can sweet corn&#60;br /&#62;
small can of green chills&#60;br /&#62;
one packet of taco seasoning&#60;/p&#62;
&#60;p&#62;Let simmer for a bit, then serve with tortilla chips, sour cream, shredded cheese and avocado!

burritos, huevos rancheros, waffles, tacos, a dish kind of like chicken pot pie except with tater tots or potatoes instead of the biscuit topping, meatloaf, Swedish meatballs, meatballs in red sauce, stir fry with rice....&#60;br /&#62;
everything comes with sauteed veggies unless the veggies are baked in.&#60;/p&#62;
&#60;p&#62;For our chili we use 2-3 types of beans (usually canned), corn, olives, fresh green or red or yellow (sweet) peppers, some jalapeno, some tomatoes, with spices--often we add cinnamon. :)&#60;br /&#62;
add the separately cooked beef and onions (no onions while I'm BFing--sad!) that have been sauteed with oregano, chili pepper, salt, pepper, and secret spices (YES spice the meat and the veggies and then add them together--so yummy!)&#60;br /&#62;
serve with chives!

<description>&#60;p&#62;My favorite crock pot dish is pulled pork. I put a pork loin and 20oz root beer in the crock lot and cook on low 6 hours. Take the pork out, dump the soda, then return to crock and pull the pork apart. add a bottle of your fave BBQ sauce and put on low for 30 mins. &#60;/p&#62;
&#60;p&#62;My other favorite recipe is a buffalo chicken calzone. I use frozen pizza dough from the store. I cut up chicken breast and cook it in a pan on the stove with a bit of evoo. I toss that in Frank's buffalo sauce. I roll out the thawed dough, spread out the chicken, top with a drizzle of ranch and add some cheese. Then I close the dough around it and bake until golden.

<description>&#60;p&#62;Easiest dinner ever (I always make it post call): Italian dressing chicken.  You can do it one of two ways.  1) Cut up chicken braise in fry pan until almost cooked.  Add Italian dressing and cook til caramelized.  Serve over pasta or rice.  When we're really fancy we throw in some artichoke hearts or sundried tomatoes.&#60;br /&#62;
2) throw chicken pieces in the oven covered in Italian dressing.  Cook until chicken is done and skin is brown and crispy.  Serve with broccoli or another veggie.&#60;/p&#62;

&#60;p&#62;I use refrigerated pizza dough from the grocery store. Roll it out, sprinkle olive oil on it and bake at 400 degrees for 8 minutes.  Top with baby spinach mixed with a little olive oil, sliced tomatoes, mushrooms,  crumbled goat cheese, whatever else you want on there. Bake another 15 minutes.

Always takes less than 30 min to make.

Garlic (minced)&#60;br /&#62;
Salt&#60;br /&#62;
Sugar (sometimes I use brown)&#60;br /&#62;
Olive oil&#60;br /&#62;
chicken, pork or fish&#60;/p&#62;
&#60;p&#62;Don't have measurements because I just measure by eye. Pretty generous with the herb and garlic amounts.&#60;/p&#62;
&#60;p&#62;mix everything together except for the protein to make like a paste. Spread it all over the chicken/pork/fish. Depending on how much time I have, I may let it sit for an hour in the fridge. Then bake in the oven around 325 degrees until done.
