I tried out my new not-so fancy $14 (!) Walmart rice cooker last night after soaking my brown rice for a bit and giving it a thorough rinse through a strainer. Guess what? Yummy rice. Thank you guys so much!!

Get a rice cooker! I put a teeny bit more water than with white rice because brown rice is chewier and requires more water/time, but the rice cooker senses the weight and knows when to turn off.

As for a recipe/brand, I just get the store brand and don't really season it much, I just mix it with whatever sauce is on the accompanying meat, or maybe use lemon pepper or something on it. But you could easily add some lime and cilantro to the rice cooker at the end (once it turns off then let it sit on warm for about 5 minutes), or sub chicken stock for water, etc. in the cooker.

@T-Mom: i soak brown rice for a few hours. It just comes out so much fluffier.

@MRS. LEMON-LIME: 2.5 cups of water seems high. Have you tried reducing it to 2 cups?

@erwoo: I was always taught that you have to soak brown rice for at least 2 hr before cooking it, no matter what the method. Is that true for you?

I use the Nishiki brand for both white and brown rice and love it. They are both medium grain. I think you can buy this brand at most markets now. If I want crunchier brown rice I put the exact amount of water I need according to my rice cooker's pot. If I want the rice to be softer I just put a little bit more water. I actually like to mix my brown and white rice together since just brown gets a little boring for me. I love putting chicken broth in my rice sometimes for flavor. It definitely gives it more taste!

I have a Zojirushi rice cooker that makes all kinds of rice. Sometimes Cotsco sells their Micom line at their stores if you have one near you. But I think most rice cookers should suffice too.

I really like short grain brown rice - the texture is better than long grain in my opinion. I usually throw a bullion cube in with it.

Could you buy a rice cooker? I got a cheapie for 12 bucks. Well woth it. I use the same brand of rice you do. 1 part rice 1 1/2 parts water. Takes maybe 25 min and comes out perfect.

Sometimes I throw in corn, black beans, cilantro.

In my quest to lose weight our family is now eating brown rice, plain brown rice. My attempts to make a good pot of brown rice have all failed. Please share your favorite brand and stove top cooking techniques.

Just a bit of background...
We had been eating Near East rice pilafs. My favorite is the wild rice. When I have made plain white rice I usually substitute chicken stock for water to add flavor. The best tasting brown rice I have had is from Chipotle and that rice is mixed /scented with cilantro.

I bought Rice Select's Texmati long grain basmati brown rice. I have tried following the recipe 1 cup rice, 2.5 cup water, simmer 45 minutes and the rice came out mushy. I have reduced the water and played with the cooking time and once it was still too mushy and the other part was dry and the rice did not change shape (dry to cooked). I even tried using part water, part chicken stock and another time I mixed cilantro from a tube, but both of these attempts have been epic fails.

Thank you for the help!!!

Hi everyone! Now that I had the baby and have been breastfeeding for almost 5 weeks, I can say that I've never been this hungry even throughout pregnancy. When I wake up in the middle of the night for feedings (still every 1-5 hours depending on the night), I'm starving! So far, I've been eating trail mix and granola bars, but I feel hungry again too soon. I'd also like to get back into pre-baby shape and don't want a ton of junk calories.

Do you have any recommendations for low-calorie snack food that is easy to have in the house, easy to eat especially while in a trance in the middle of the night, filling but not heavy, and not too caloric?

Thanks!
