I make this baked oatmeal a few times per week and DS looooves it. Note: I omit the butter and salt.

I make some super-healthy peanut-butter banana muffins, and some other ones that have chia, flax, oats and Greek yogurt in them. They're on my blog (link in my profile), but I don't want to post the link, cause I think that violates some rules, ha ha.

I make egg-and-cheese breakfast sandwiches and use a muffin top pan to bake the eggs. It's the perfect size for the english muffin. I just give each well a quick spritz with olive oil (I have a pressurized can of it that works like Pam but is pure olive oil) and they slide right out. I put each sandwich in a waxed paper bag and then put five of them back into the english muffin bag so they're easy to carry to work. I keep them in the work freezer and pop one in the microwave each morning.

I'm sure there are healthier breakfasts out there, but this one works for me :)

@Foodnerd81: yep, I don't grease them for regular or egg muffins. My only caution is that some that aren't 100% silicone and they smell weird after you use them - I had a cheapy set that I hated, and then read that and bought the ones I liked since they had good reviews, and they're way better!

We eat these almost daily. I love that they are not messy forth car or stroller and I feel good about the amount of protein compared to regular pancakes. It calls for 1/2 cup of flour, I use 2/3 of that 1/2 cup as whole wheat and fill the rest of the measuring cup with white flour. I also add cinnamon or pumpkin pie spice and 1/2 can pumpkin or one mashed ripe banana to hopefully keep us from getting bored. http://weelicious.com/2010/10/05/cottage-cheese-pancakes/

@regberadaisy: @LuLu Mom: When you make the egg muffins / mini quiches, do you line the pans? I had to throw out pan because even though I thought I greased it enough, I just could never get the stuck on egg out. I'm thinking foil liners will work best?
And, if you freeze them, how do you heat them up for breakfast? Microwave or toaster oven?

I'm in full on nesting and food prepping mode- made lasagnas yesterday, calzones this morning, egg muffins and mac and cheese coming up this afternoon, then chocolate chip cookies because I want them :)

I make a simple spinach quiche in a 9 inch cake pan (all I have). It's a box of frozen chopped spinach (cooked and drained well), 4 eggs, 16oz container of cottage cheese, and 2 cups shredded cheddar. Mix together and bake for 1 hour. P and I both love it and gives us breakfast for at least 3 days, sometimes 4. Since she is not interested in whole milk, but still BF, I know it helps her get dairy.

The only way we get a "healthy" breakfast in the mornings is by making a big batch on the weekends and freezing them. Otherwise mornings are just too hectic with two FT WOH parents!

I love these because there's no flour; just rolled oats!

http://www.theveggiegal.com/blog/?p=1007
I love throwing in applesauce, yogurt, cinnamon etc into this one.

http://www.superhealthykids.com/healthy-kids-recipes/buckwheat-multi-grain-waffles.php
This is a good recipe for waffles using buckwheat!

http://tartletsweets.blogspot.com/2013/03/blueberry-banana-buckwheat-pancakes.html
Banana buckwheat pancakes! My fave.

http://www.manilaspoon.com/2012/08/spinach-quiche-cups.html
I used this quiche recipe as a base but added garlic and sautéed the spinach with garlic as well. It was a huge hit! My LO who has been refusing eggs for the past few months will eat this! Mom win!

http://www.saveur.com/article/Recipes/Banana-Oatmeal-Muffins
This a fave muffin of mine. I never have buttermilk so I just do a hack with milk + lemon juice.

http://www.thekitchn.com/oatmeal-in-jars-a-week-of-stee-143623
This isn't a freeze recipe but a great way to make steel cut oats with minimal effort. I wait to throw in fruits in the morning.

What make ahead / freeze breakfast recipes have you tried and loved?
