@irene: Agree I'd be frustrated by the policy of not being allowed to pack lunch, then having them serve what seems like a pretty low-protein lunch. That plus the no nut policy makes it tricky.

If you're really struggling, could you just keep doing what you've been doing, and worry about protein at breakfast/afternoon snack/dinner instead?

We love banana or pumpkin pancakes served cold - just egg, banana (or pumpkin), cinnamon, baking soda, and a little maple syrup cooked on the griddle and chilled. Kind of like a sweet omelet.

@irene: I will check for you. Two days ago I made Pilsbury croissants (don't really ever use this but decided to test out on LO again) and put half the unused dough back in a ziploc in the refrigerator and it tasted exactly the same when I made the other half yesterday.

@irene: i dont think it has to be more difficult. i would just stick with something small and quick. he shouldnt need that much food as a snack. i send either a pouch or a couple crackers with sun butter or a cheese stick. all of those are super quick and simple. these ideas all sound so yummy and healthy, but they sound like lunch to me anyway, and your school might frown on you sending so much food if they have specifically asked you not to send a lunch

@irene: I don't think that they stink, but I'm an adult and can handle it rather than a preschooler who might be picky. RE veggies and dip, that's why I suggested the wrap. My daughter won't eat veggies and dip, but she will eat a veggie/hummus wrap sometimes.

Thank you all!!!

@808love: Do you have a recipe? I have never used those pre-made dough but will look into it! My dilemma is, most recipe makes say 36 of these little pastries which I can't freeze and reheat.... and that really won't taste very good I would imagine..! I'll think about it though for sure - thanks!!

@sandy: Do you have the egg roll recipe? That sounds interesting!

@PinkElephant: Yes but like you said I am not sure if DS would eat cold quesadilla!

as a vegetarian, dairy and eggs are like my main protein sources (along with beans) so the lunches your son is getting aren't that bad to me! but I echo other posters that have mentioned hummus (or you could make/buy a spread with black beans instead) and sun-butter (or soy-butter) too. yogurt pouches/tubes or cheese sticks are also go-to protein snacks for my lo.

@irene: I haven't personally made it before. This recipe looks tasty. In my head I was imagining using those mini muffin tins to make either in and it being less messy that way because then it's in a basically two bite format.

Like others already said if I had to do a protein snack I would do hummus and veggies, little meatballs or patties, deviled eggs, mini dumplings, southwest style egg rolls (fill with beans and meat and roll up and bake and serve at room temp), a lot of different kinds of beans either baked or just steamed whole.

@Mrs. Lion: ooo I have to look into the Greek yogurt pouches! Where do u find them- whole foods or target? I have never seen them for some reason. And for sunflower butter I just hope I don't get him in trouble as the teachers probably think it were peanut butter! But I gotta get some.

@avivoca: I guess hard boiled eggs won't stink, I hope? And the potential mess with the yolk scattering everywhere...! I would love to do it but am afraid I'd get DS into trouble :silly: sucks that DS won't eat hummus, or any kind of dips...

@Mrs. Goose: do you have a recipe for that??? Will it be messy?

@gingerbebe: true... What you said make me feel better that they probably had guidelines to follow! Thanks for all the suggestions!

It looks like they are doing vegetarian meals which may be more inclusive for other kids. Cheese and eggs in the ricotta, cheese, and French toast have protein so I don't think they are lacking completely. Most states have nutrition requirements for school meals extending even to daycares.

I would do Greek yogurt pouches like someone else said, string cheese or cheese sticks, hard boiled eggs, turkey and cheese roll ups (just find a good quality sliced roast turkey), steamed edamame pods to eat cold, you can freeze smoothies in cups and let them thaw until snack time, roasted chickpeas, cold bean and cheese quesadillas with refried beans, cold potstickers.

I would do yogurt pouches, cut veggies with hummus (put in a whole wheat wrap too), cold hard-boiled eggs, meat and cheese wraps, and perhaps milk.

ETA: it is super easy to make your own hummus and then you can make sure there are no pine nuts in it.

DS is 4.5 years old, and we have switched to a new school for pre-k. We are not allowed to pack lunch (school lunch and one afternoon snack is provided), but we are required to pack a "nutritious morning snack". The snack needs to be nut-free finger foods (no spoon). We can pack with an ice-pack, but reheating is not available. The snack is eaten cold or at room temperature.

After a few days of school, I noticed the lunch they provided lack protein. One day it was cheese ravioli with broccoli and some fruit, the other day is some pasta marinara. Today was french toast and eggs. The afternoon snacks was also disappointing.... applesauce for 2 days (which DS doesn't eat), and today they served "veggie sticks", which is really carrot flavored chips. Sigh. I was spoiled by his daycare which sometimes provided real fruits as snacks! Back then we were also allowed to pack lunch.

There is really minimal protein for the entire day other than morning and dinner, so I want to pack protein-filled, nut-free morning snacks. I am going to make him a mini (leftover) chicken, lettuce and cheese sandwich tomorrow. I also thought about getting sunflower butter (sunbutter), which has equal amounts of protein as peanut butter. Other things I could do are mini hotdog bites, or little turkey and spinach rollups... but I kinda want to stay away from processed meat if possible. Quail eggs is another possibility. I thought about baking something for him with meat inside, but those won't taste good cold.

You guys are so creative so I thought I'd put it out here to pick your brains! Any wise thoughts / recipes to share??
