How about tomatillos? I would try fire roasted veggies in the salsa. They char will make them easier to hide.

Following because I have a salsa addict also. If we aren't watching she'll just start drinking it.

I bet you could hide some chopped up fine zucchini. Raw zucchini is basically tasteless. I hide zucchini in other things like chili and spaghetti sauce and no one has ever noticed, adult or child.
Maybe also minced baby spinach since there are other green “herbs” in salsa.

We have our standard smooth tomato/cilantro/green onion salsa that we love. We've removed the jalapeno and cumin and red pepper so he doesn't get diarrhea anymore from the spice  , but now I want to sneak some vegetables in.

@VEGMAMA: which kind do you see?
This is baby bok choy:
http://www.simplyrecipes.com/recipes/baby_bok_choy_with_cashews/

I usually do stir fry or use in noodles

We call napa cabbage "bok choy"
http://www.gourmetsleuth.com/Dictionary/N/Napa-cabbage-4986.aspx

We have some nice big raised beds for vegetables, but no plans to put anything in them this year. We need to work on that! LO has been keeping us busy, plus we got discouraged last year when our dogs decided they loved tomatoes and ate them all as soon as they were ripe. Then we put in a fence so the dogs couldn't get to the garden beds, and squirrels started eating all of our greens :(

We have a huge garden, 110ft long. We moved in a year ago and it was a jungle - it took me all spring to salvage the established plants that I wanted to keep and then plant up the areas I'd cleared - flowers, shrubs and herbs near the house (plus a little tomato patch) and a veg patch further down the garden. Unfortunately, we had the wettest summer in living memory last year and, veg wise, what didn't get washed away was eaten by a plague of slugs! I was heartbroken!

Here are some photos taken before the rain started! I love my garden! I hope I have the energy to tend to it when the weather perks up here - if it ever perks up!!
