@ElbieKay: I love chicken salad (of any kind) on croissants!

I was going to suggest a smithfield style ham, with small rolls in case people came from being out and didn't have a chance to get lunch.

You can roast some beef or pork the day before and slice for sandwiches. Use smaller rolls and have some horseradish out.

My husband is making chicken curry salad for our son's birthday next weekend. We are going to put it in croissants and slice them in half.

He's also going to make babaganoush (grilled eggplant blended with tahini, olive oil, salt and pepper) for a vegetarian option.

I've never made meatballs, except for the kind to put on spaghetti, but you guys are certainly encouraging me!
@autumnleaves: our neighbor is a farm, and they have a food stand and sometimes do wings. Maybe I can see if they do a tray. It's a pretty small gathering, so it wouldn't be too much.

If men are going to be there, I might try picking up wings or barebecue (something meaty) at a local restaurant. For my bridal shower there was a local brewery that my friends picked up some barbecue from and it was a hit.

Here's a recipe for baked chicken that can be served cold/room temp:
http://www.dinneralovestory.com/picnic-chicken/

We've made it a few times (for picnics) and it was tasty.

Crockpot meatballs is a great idea, always such a big hit and so easy to prepare. I also like premade frozen apps like spring rolls - a little heartier but still no work. Maybe a layered nacho dip?

Meatballs in a crockpot - very easy and a hit with the cheese and crackers! I buy them frozen, toss in a crockpot with grape jelly and BBQ sauce and let them sit.

@deerylou: oh, I like the idea of a salad. I have celiac disease and and am generally unimpressed with gluten free pasta- but maybe some like a bean salad and a quinoa salad?

I would do something heartier that can be prepared ahead of time. Either premade frozen apps or a couple of quiches come to mind.

I know it's between lunch and dinner, but a heavier snack would be nice! I think a pasta salad would be a good addition. We like making one with farfalle, basil, strawberries, goats cheese and balsamic.

Chicken salad goes over well, too. I make mine with finely chopped walnuts, golden raisins and granny smith apples. Great served on crossiants or on top of some baby spinach.

Hosting a friend's bridal shower this spring. men will be there, and we aren't doing a lot of games. Mostly just an afternoon get together.
Starting at 2:00.
I'm thinking dips, chips, crackers, cheese, veggies. Cake or something sweet obviously.
Originally I thought we'd do chicken wings with a dry rub to have something more substantial, but my husband said he's not "confident" in his wing skills and doesn't want to prepare them for a lot of people.
Do we need a more substantial snack? Suggestions?
