Flats traditionally refers to large squares of cloth which are single layer and not pre-folded. You can beat the crap out of them (literally, hahah). You can bleach them if need be and it won't wreck the rest of the diaper because you wash the covers with your clothes (unless they're super gross. Don't bleach covers though!)<br /> They're like prefolds but easier and more costly.
