<description>&#60;p&#62;@spaniellove:  Well, the way my korean friends (i'm only honorary Korean, haha) made gukbap, it was a huge hunk of beef boiled for soup, and then boiled with the daikon radish slices. And then the beef was shredded and seasoned with soy sauce, sesame oil, scallion, red pepper flake.. And served with the soup and rice..I might not be remembering the exact name right!

<description>&#60;p&#62;@blackbird:  Oh interesting, I'm pretty sure that's the recipe I use (since I use her recipes for everything unless I'm using a cookbook) but I've always added potato and never mushrooms. Sometimes I substitute agave nectar for corn syrup in these recipes. It's not exact but you Korean recipes are all about winging it.  :happy:

I couldn't bring myself to use corn syrup to sweeten it.  It was easy but definitely something to do on a weekend when you're home, b/c it has numerous steps, you have to stir it now and then, etc. I started it at 2:30pm and we ate around 5:30, but it was leisurely and i just kind of kept going to the kitchen every 30 min to rinse the pot or stir it or whatever. &#60;/p&#62;
&#60;p&#62;@spaniellove, yes, i was really surprised that it wasn't radish-y tasting. Dh wasn't super keen on it, but I think next time I will add potatoes for him.

&#60;p&#62;I used half a daikon radish to make some pickled carrots and daikon for dinner, Vietnamese style. I usually make kkakdugi (Korean kimchi style radish), but I only like to do that during the summer because I use the hose to rinse it off real well, plus I gift it all to my parents--I don't like it!&#60;/p&#62;
&#60;p&#62;Any ideas for the rest of this massive radish?
