In order for the meat not to be well done, I would just use slightly seared beef to start with. I am a pretty good cook and love Beef Wellington (we had it at our wedding). Making traditional Beef Wellington is the only time I have ever failed at a meal and it was a big fail and an expensive waste of good meat. I then saw this on GMA one day and thought I would give it a try. Not traditional, but so good.
