I just mix up all the dry ingredients from my current favorite pancake recipe in a gallon Ziplock, weigh the bag on my kitchen scale, and divide by the number of batches it's supposed to make to find the weight I should use each time (so if I made enough for 6 batches and it weighed 48 oz, I'd know to use 8 oz of mix).
