Let it go for 6 hours, then wrap the mix in tortilla, top with enchilada sauce, cheese and bake for 10 minute or so. I usually just make ground turkey tacos with the flavor packet or salsa chicken in the crockpot when we do Mexican night here. I think I need more of a one dish item for the potluck though. Anyone have any favorite recipes? Maybe enchiladas? The easier the better bc we will also have houseguests the day I need to prepare it! </p>
