<description>&#60;p&#62;I love Texas Caviar for a pot luck. It's easy and the recipe I have makes a lot. It's kind of like a bean salsa.&#60;/p&#62;
&#60;p&#62;2 cans black eyed peas&#60;br /&#62;
2 cans shoe peg corn&#60;br /&#62;
1 small tomato (or larger if you like), diced&#60;br /&#62;
Green onion, thinly sliced&#60;br /&#62;
Cilantro (just a little) finely chopped&#60;br /&#62;
1 package italian dressing mix, prepared according to package instructions&#60;/p&#62;
&#60;p&#62;Pour black eyed peas and corn into a colander. Rinse to get rid of any gravy from the peas. Pour mixture into a large bowl. Add other ingredients and mix well. Refrigerate over night and service with tortilla chips (I prefer Tostitos scoops).&#60;/p&#62;
&#60;p&#62;-You can use bottled Italian dressing but it doesn't taste as good. &#60;/p&#62;
&#60;p&#62;-I usually skip the green onion because I'm not a fan, but you can use as much or as little as you like.&#60;/p&#62;
&#60;p&#62;-You don't need very much cilantro at all. A little goes a long way with this!

<description>&#60;p&#62;- 5 boneless skinless chicken breasts&#60;br /&#62;
- 2ish cups chicken broth&#60;br /&#62;
- 1 jar blue cheese (Marie's works well - the kind in your produce section)&#60;br /&#62;
- 3 blocks cream cheese (allow to soften to room temp)&#60;br /&#62;
- Frank's Red Hot (or other hot sauce of your choice)&#60;/p&#62;
&#60;p&#62;- Place chicken in a deep pot and cover with chicken broth. Let boil until fully cooked and it begins shredding&#60;br /&#62;
- Remove chicken from pot and shred using a kitchen aid mixer or forks.&#60;br /&#62;
- Mix shredded chicken with cream cheese and entire jar of blue cheese. Add hot sauce to taste.&#60;br /&#62;
- Place chicken mix in a baking dish and bake at 350 for 45 minutes&#60;/p&#62;
&#60;p&#62;Best served with veggies or tortilla chips!

&#60;p&#62;■ 2 cups shredded cheddar cheese&#60;/p&#62;
&#60;p&#62;■ 1 cup shredded Monterey Jack&#60;/p&#62;
&#60;p&#62;■ 2 tbs chipotle peppers in adobo sauce, diced small&#60;/p&#62;
&#60;p&#62;■ 1 small can (4oz) diced green chilies, undrained&#60;/p&#62;
&#60;p&#62;■ 1/2 cup Mayo&#60;/p&#62;
&#60;p&#62;■ 1/4 tsp garlic powder&#60;/p&#62;
&#60;p&#62;■ 1 11oz can of corn, drained&#60;/p&#62;
&#60;p&#62;■ 1 small tomato&#60;/p&#62;
&#60;p&#62;■ 2 tbs cilantro, chopped&#60;/p&#62;
&#60;p&#62;■ 2 tbs green onions, sliced thin&#60;/p&#62;
&#60;p&#62;2. Preheat oven to 350 degrees.&#60;/p&#62;
&#60;p&#62;3. Mix the cheeses, chipotle and green peppers, mayo, garlic powder and corn together.&#60;/p&#62;
&#60;p&#62;Pour into an oven safe dish.&#60;/p&#62;
&#60;p&#62;4. Bake 20 minutes or until golden brown and bubbly&#60;/p&#62;
&#60;p&#62;5. Top with diced tomatoes, green onions, and cilantro. Serve immediately with tortilla chips
