My grandma used to tell use that a homemade birthday cake is one of the most special things you can gift someone. Its not just a present its time and energy and love. I will never forget that. I replaced packaged baking powder with a homemade formula (I never realized how many things had corn until I had to avoid it). I also found a recipe to make your own cake flour and its way cheaper than buying cake flour! The original recipe is from <a href="http://www.myvegancookbook.com/blog/2010/01/30/white-cake-recipe/" rel="nofollow">http://www.myvegancookbook.com/blog/2010/01/30/white-cake-recipe/</a> and below are my tweaks plus the frosting recipe. I separated the batter into small batches, colored and baked in a 5" baking pan for about 8 minutes to make the mini 5" rainbow cake. </p> <p>2 cups bleached cake flour (1/4 cup potato starch + 1 3/4 cup AP flour, sifted)<br /> 3/4 cup sugar<br /> 1/2 tsp salt<br /> 1 tsp baking powder (1/4 tsp baking soda + 1/2 tsp cream of tartar + 1/2 tsp starch - mix well before adding to bowl)<br /> 1/2 tsp baking soda<br /> 1 cup water<br /> 2 tbsp melted light vegan butter (or coconut oil)<br /> 2 tbsp canola oil (or coconut oil)<br /> 1 tsp clear vanilla<br /> 1 tsp lemon juice</p> <p>Prepare your cupcake pans with paper cups and preheat the oven to 350 degrees.In a mixing bowl add dry ingredients: flour, sugar, salt, baking soda and powder. Stir together. Next, in a separate small mixing bowl combine the wet ingredients: water, butter, oil, vanilla, lemon juice. Stir the wet ingredients together. Now pour the wet ingredients into the mixing bowl with the dry. Take special care not to over mix the ingredients. DO NOT use an electric mixer.
