I guess I figure, how do you expect to improve your cooking skills if you don’t try things outside of your comfort zone? I used to always order steak when we ate out at a nice place, because I thought great steak was hard to cook. I love experimenting. I'm an adjust-until-it-tastes-right person. Sometimes I'll follow a recipe, but more often than not, I'll use a recipe as a base and adjust it based on what I have/what I want the end product to be.
