Sounds like you are off to a wonderful start - I love your ideas! You could add a cheese plate - maybe have a cheese tasting (if she likes cheese) as part of the appetizer and a cake or cupcakes, cobblers in small mason jars, or fresh fruit and chocolate for dessert.

Oh man, so many good options. You could do a sandwich bar like you mentioned. Selection of breads, croissants, rolls, etc. to pick from. Sliced meats, maybe some chicken salad, grilled veggies, selection of spreads (typical mayo/mustard, but could do fun stuff like herbed cheese spreads, pesto, etc.), selection of sliced cheeses to pick from. Additional topping like lettuce/spinach, onion, whatever.

Maybe a couple of pasta/quinoa salads and a green salad.

There’s also taco bars (can easily do more upscale than ground beef/hard shells), mac and cheese bars, pulled pork/BBQ bars, antipasti bar, etc.

I'm hoping someone can give me some good ideas for what to serve at a baby shower that we're throwing for our SIL. It does start at 11 so normally, I would think brunch but we literally had this exact same shower for her last year when they got married. Same weekend and everything! Our original idea was to do more lunch type items. We would make a beef and a pork tenderloin and slice up for sandwiches along with a nice soup and a salad. My other SIL wanted to make shrimp salad. We'll be sure to keep the soup and the salad vegetarian. Does anyone have any other ideas of what worked for them? It'll be somewhat small with around 15 people. And I love to cook so I really like making most of the food. I'm just having a total mental block on menu ideas. Thanks!
