@T.H.O.U.: I honestly don't know how it affects lactose and if you can use the same method for an intolerance. The biggest difference between an allergy and intolerance are what systems of the body are affected. With an intolerance, the digestive system is the only one affected. For an allergy, the whole body can be affected (skin, lungs, etc).

@Adira: @T.H.O.U.: Can you guys tell me what the loose stools on dairy look like? I've started to give DD2 WCM and her stools have been more PB like in the past week and not as solid as before. She's had yogurt and regular formula for a couple of months now but her stools just changed once I introduced the WCM.

@Adira: I had never really heard that either which is why I was interested in this thread. So it alters the protein make up but does it alter the lactose? Is that the difference between a allergy (protein) and an intolerance (from lactose)?

@MamaG: Baking alters the protein, which can allow someone with an allergy to tolerate it without reacting to it. So baked milk products are advised to bake it at 350 degrees for 30 minutes. Baked cheese on the other hand is baked at different heats for different amounts of time, so the protein won't be altered as much as a baked milk product would be. But it changes it enough that someone might be able to tolerate who can't tolerate "raw" cheese or milk. Hopefully that makes sense!

@Adira: This is interesting to me, does "baked" cheese somehow change form compared to regular cheese? Or is it more of a quantity issue of pizza would have less cheese than eating a whole cheese stick or slice of cheese? I get that baked cheese is melted, but does it somehow actually change to be less reactive to your son. I'm not sure I explained that well.

@T.H.O.U.: I don't know if it's a "thing" for kids, but I have lactose intolerance, and it sounds exactly like what your daughter is experiencing. Gas and loose stools with dairy, but can eat baked goods. Even baked cheese makes me sick, as does regular yogurt, ice cream, and even processed cheese (like, even the powder stuff on Doritos). Not sure if it's the same thing for kids/adults.

@T.H.O.U.: Yeah, if she can't tolerate baked cheese, I'd hold off on any of the more "raw" forms of milk: milk, butter, cheese, yogurt.

They do make non-dairy yogurts though, which my son ate all the time as an infant! We got the ones by So Delicious.

@Adira: Thanks!

Yes she's fine with baked goods (bread, crackers, etc).

It seems like even baked cheese seems to set her off (mac and cheese, pizza, etc).

I guess that means I should hold off on yogurt too. Ugh.

@T.H.O.U.: It sounds like it's more likely to be a milk protein intolerance, though an allergist could confirm an allergy. I don't know if you do things difference for intolerances vs allergies, but our order was to do baked milk (cake, muffins, bread, cheeze-its, etc). If they can tolerate that, you're supposed to ensure they get baked milk in their diet regularly. Then try baked cheese (pizza, casserole, baked mac & cheese, maybe goldfish and/or milk chocolate). If they can tolerate stuff like that, you want to give them that stuff regularly. And then after that, would be trying regular milk. Good luck! <3

@Adira: I dont know what we are dealing with. Just lots of gas pains and loose stools after having dairy. She's still on soy formula and occasionally the new Ripple milk. I'm trying to figure out the hierarchy of dairy so I know how to work my way up.

@T.H.O.U.: Are you dealing with a milk allergy? The baked cheese/pizza challenge is basically a step between a baked milk challenge (which Xander passed 2 years ago) and regular milk challenge (which he failed twice). It's to see if they can tolerate more dairy than just baked milk. So now he can have pizza and possibly things like lasagna and baked casseroles. He might also be able to tolerate other forms of milk, like in chocolate.

He still has to avoid all "raw" forms: milk, butter, unbaked cheese, yogurt, ice cream, pudding, etc.

We did! My kid is MSPI, not allergy, so we had more leeway. I started with sheep cheese (a hard parmesan like one). Then I ordered a normal pizza and he had a few bites. We were told to try with a few bites, wait, then offer a whole slice the next day. He was totally fine! He still cant do milk or ice cream, but he loves pizza

Anyone done a Baked Cheese/Pizza Challenge with their dairy-allergic child?

Xander failed the Milk Challenge a few weeks ago, but only on the last dose, so I'm hoping that maybe he can actually pass a Baked Cheese Challenge. We have one scheduled for the end of the month. I'm curious what to expect!
