<description>&#60;p&#62;@regberadaisy:  just until they are chilled and firm. Depends on the temp in your house but maybe 30 mins? If you want to do more steps in advance, you can also make the dough, wrap in plastic wrap and then chill in the fridge for up to 3 days. Then roll out and proceed.

<description>&#60;p&#62;@regberadaisy:  yep you can definitely bake, freeze, then ice later. I would ice them up to 2-3 days before the party. I agree with @MrsSRS:  about freezing before baking. I usually roll out dough between 2 sheets of parchment, chill in freezer until hard, then stamp out shapes, and bake - but if they start getting too warm, pop the dough back in the freezer for 10 mins after you stamp but before you transfer to the pan. <description>&#60;p&#62;If you have time, I have the book Cookie Craft and the recipes in there are my favorite for both cookies and icing.  Also great tips on techniques.  I do think what you have pictured is easy to make once you get the technique, but it is a little bit of a learning curve.  I could do those no problem but am not good enough to do complex things!

&#60;p&#62;but frosting wise, I'd make it. It will be much cheaper. Just make sure you make royal icing is you want a smooth look like in that photo. It has a steeper learning curve than regular frosting, but once you get the hang of it it's easy and fast.

<description>&#60;p&#62;I want to make shaped cookies for DS's first birthday. Nothing crazy, just the letter A and maybe the number one. I've never been successful at making a soft yummy sugar cookie that still holds its shape from a cookie cutter. Suggestions? Also, do I just buy the cookie icing or am I better off using something else?
