<description>&#60;p&#62;You definitely have to freeze/refrigerate each layer, just as you would with any layered mousse cake. I used to make a 3 chocolate layered mousse cake and each layer had to be frozen for about 6 hours before the next layer was put on top. Even if mousse is quite runny it will completely firm up with overnight refrigerating. &#60;/p&#62;
&#60;p&#62;Use a parchment paper collar on a spring form pan with a cardboard base layer while you are building layers, then when all the inside layers are finished, remove the collar and the springform pan and do the icing decorations and then put it all back in the fridge until the party.

I did a homemade white cake mix, and then I colored equal portions so the layers would be even.  If I had access to white cake mix at the time, I would have done a double batch.

I use Wilton which is available at like Walmart  or Michaels  or americolor (which I order online)  the color is easy stronger and a little goes a long way.  Food dye most people think of the amount you need could water down your batter to much effecting the outcome and they don't give as brilliant of colors.

<description>&#60;p&#62;I would either buy it directly from Cheesecake Factory or make something else. I’ve done all kinds of cakes for my kids, and they seem to like them all equally. Most years with DS I’ve had him pick out what he likes in the grocery store. One year we did funfetti with pink frosting, one year we did a purple and white “tie dye”. There are lots of fun and easy cake ideas. Little kids just don’t care that much or need cakes that take 3 days to make.

I think the only difference for me is that you get a big round biscuit or cookie cutter and cut the holes out of the middle and then freeze. Then you also just have to frost the inside of that “tunnel“ So that the sprinkles and candies etc. stick and it looks more full.&#60;/p&#62;

<description>&#60;p&#62;@SweetiePie:  I did a rainbow layer cake (minus the extra candy filling) for my daughter’s bday party. The layers weren’t too bad. I used two white cake box mixes and made three layers at a time- I had three cake pans, so divided one box into three even amounts and colored each one- use gel dye not regular food coloring. Then I froze those three layers wrapped in plastic. Next day, I made another box mix divided into three bowls, three different colors. Bake cool wrap freeze. 2 Day before the party I made the frosting, day before I took the cake layers out and frosted them still frozen. It wasn’t that hard, just took some planning in advance.

<description>&#60;p&#62;@Mrs. Lemon-Lime:  that’s partly to make sure everything is well set, and partly because it’ll take at least a full day if you do it all at once. I’m also not a pro, just a home baker who loves baking. &#60;/p&#62;
&#60;p&#62;For me the timeline would look like this:&#60;/p&#62;
&#60;p&#62;Day one: bake funfetti cakes, after they’re cooled to room temp, put in freezer wrapped in plastic wrap. &#60;/p&#62;
&#60;p&#62;Day two: make buttercream, trim each layer of the cake. Make pink mousse, cheesecake, and brown mousse. Put trimmed bottom layer in a lined springform (or maybe just wrap with acetate?? I’ve never done a cake like this and I know my springform is actually larger than my cake pans), pour one layer of chilled but not set mousse, let that firm up slightly in the fridge, (maybe 20-30 minutes depending on your recipe), then add no-bake cheesecake layer (chill again), then add mousse layer. Then I’d leave this part in the fridge for a night to fully set and firm up so the weight of the next cake layer and mousse/cheesecake goes on a fully firmed cake.&#60;/p&#62;
&#60;p&#62;Day three: make the final cheesecake and mousse layers. Add a small layer of buttercream to the already fully-chilled cake so the funfettti cake adheres to the cheesecake layer, then basically pour and chill, pour and chill. Then I’d let the whole thing firm up for several more hours (maybe even overnight again) before adding the final frosting to the whole cake. &#60;/p&#62;
&#60;p&#62;It’d be quite the undertaking for sure!&#60;/p&#62;
&#60;p&#62;I’m not positive, but I imagine you’d need a fairly firm mousse recipe, and you’d want the layers to be slightly set (but not 100% set) before you pour the next layer. Definitely check out any mousse layer cake videos you find!

<description>&#60;p&#62;My biggest tip for big projects like this is to freeze and trim to keep things neat. I expect to make things like this over several days (like at least three). Things like this require more patience than anything else because to look neat everything needs to be cooled well and then trimmed and then cooled again and I just rarely have the patience for this type of stuff. Lol. Good luck! You’ll definitely need to cool every layer before you add the next. &#60;/p&#62;
&#60;p&#62;Try looking up tips on YouTube for perfect and professional looking cakes. It has helped me a lot!&#60;/p&#62;
&#60;p&#62;Edit: I’d also make sure to have a good springform. I would definitely attempt this type of cake (I’m probably an intermediate beginner baker) but I’d have to be confident in my mousse and no-bake cheesecake. &#60;/p&#62;
&#60;p&#62;There’s a Japanese YouTube (Cooking Tree) channel that does a ton of mousse cakes!&#60;/p&#62;
&#60;p&#62;Edit2: I’d also not use a box cake recipe because they tend to be very soft, which may make it dip in the center. I’ve found that the funfetti “flavor” is just 3:2:1 vanilla extract:butter extract: almond extract. And then just add a small jar of sprinkles to any white or yellow cake recipe.

I want to attempt this for my 4yo bday next week, minus all the stuff on top, but I’m still trying to motivate myself. It actually doesn’t look too bad if you read through it. But I usually just do a sheet cake or cupcakes from a box, Frost from a can, and decorate with cute sprinkles. So this would be a huge deal for me. This cake in NYC is like $250 for a SMALL cake. But they’re so cool.

&#60;p&#62;If you still want to attempt it though, I have some suggestions: freeze the layers. Colder layers are just less finicky. I'd also recommend piping in the non-baked layers to make them more even. If you don't already have the tools, hit up IKEA for some cheap baker toolsets that you can play with before you spring for the good quality stuff.

I would personally buy it (I've recreated CF red velvet and it was pretty much close to the same price plus the time involved is not worth it...IMO), then I would smooth a layer of whipped topping on top to make a smooth blank canvas to decorate. CF always adds whipped cream anyway; why not smooth out a fresh layer of whipped cream, refrigerate it for an hour to firm it up then decorate as usual :)

<description>&#60;p&#62;Even if you managed all the parts and made a copy cat the flavors wouldn't be same so if your sold on that buy the cake.&#60;/p&#62;
&#60;p&#62;I like to bake and I'd try it if I liked that kind of cake lol. But it be a very time consuming effort and some specialty ingredients and bakeware. If your not a Baker by the time you got everything the original cake might not be cheaper.  (For example you'll need a spring form pan for the cheesecake)&#60;/p&#62;
&#60;p&#62;And my experience kids typically dont care about the fancy flavors and would be just as happy with a funfetti cupcake and vanilla ice cream. You could have a local bakery make some gourmet cupcakes and pick up some high end icecream for less then that cake would cost too.

<description>&#60;p&#62;This cake looks super complicated, I bake all the time and can get pretty fancy and I would probably say no to cake, cheesecake and mousse all at once.  If you wanted to attempt it you would need a true cheesecake, not a no bake version and gelatin would help other mousse layers stay thick and hold their shape.  If you ever want to make your boxed cake mixes taste better, use butter instead of oil, milk instead of water, and sometimes an extra egg.  I also have added vanilla or almond flavoring much like @Mrs D:  suggests.

&#60;p&#62;There are still LOTS of ways to make a super fund cake.  My first birthday cake for DD1 was a rainbow cake...6 layers of colored cake...HUGE hit.  I coated the sides in sprinkles (much like this one).&#60;/p&#62;
&#60;p&#62;FWIW - with kids cake I always take the help from starting with boxed cake mix.  If I am using white cake (for purposes of coloring the cake) I usually add some almond flavoring to fancy it up!

<description>&#60;p&#62;LO has quickly learned birthdays are fun and cake- filled. He loves the CF Celebration cake. Harry David ships it, pre-sliced for 10 for $90. I’d like to make it myself because a) it should be cheaper and b) I want to decorate the top of an unsliced cake. &#60;/p&#62;
&#60;p&#62;The cake has layers of cake and mousse and cheesecake. It tastes like classic birthday cake and Neapolitan ice cream. I’ve made box cake with canned icing before and the icing layers come out super thin. How do I get the thick layers for the mousse. How do I prevent the weight of the top cake layer not smashing the mousse?
