<description>&#60;p&#62;Question for all the bakers out there: I made a banana bread last night and it baked a bit uneven. The bottom is cooked and the top is cooked but the center is a little wetter (though it seems cooked). If I had left it in longer I think it would have started burning. Is there anything different I could have done?&#60;/p&#62;

&#60;p&#62;Janet’s Rich Banana Bread&#60;/p&#62;
&#60;p&#62;Adapted from allrecipes.com&#60;/p&#62;
&#60;p&#62;Makes 1 9x5 loaf&#60;/p&#62;
&#60;p&#62;1/2 cup butter (1 stick), softened&#60;/p&#62;
&#60;p&#62;1 cup white sugar&#60;/p&#62;
&#60;p&#62;2 eggs, room temperature&#60;/p&#62;
&#60;p&#62;1 tsp vanilla extract&#60;/p&#62;
&#60;p&#62;1 tsp lemon juice&#60;/p&#62;
&#60;p&#62;1-3/4 cups all-purpose flour&#60;/p&#62;
&#60;p&#62;1 tsp baking soda&#60;/p&#62;
&#60;p&#62;1 tsp baking powder&#60;/p&#62;
&#60;p&#62;1/2 tsp salt&#60;/p&#62;
&#60;p&#62;1/2 cup sour cream&#60;/p&#62;
&#60;p&#62;1/2 cup chopped walnuts&#60;/p&#62;
&#60;p&#62;2 medium ripe bananas, mashed (should equal 1 cup)&#60;/p&#62;
&#60;p&#62;Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.&#60;br /&#62;
With a mixer, cream together the butter and sugar. Whisk in the eggs, vanilla, and lemon juice by hand; mix well. Combine the flour, baking soda and salt; stir into the butter mixture with a spatula until smooth. Finally, fold in the sour cream, walnuts and bananas. Spread evenly into the prepared pan.&#60;br /&#62;
Bake at 350 degrees F (175 degrees C) for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.
