<description>&#60;p&#62;I stick a roast, a can of cream of mushroom soup, half can of water, and a packet of onion soup mix and cook until it is fork tender but not fall apart. Slight variation on your french dips. Sometimes I'll stick red potatoes and baby carrots under the roast.

<description>&#60;p&#62;We do vegetable beef soup with chinks of beef, potato, carrots, celery, onion, and canned peas, corn, and green beans (the canned veggies make it extra comforting and good I promise!). Add broth and a bay leaf and some pepper and let it go until tender and add salt to taste.&#60;/p&#62;
&#60;p&#62;We also do a version of French dip called Italian beef.  We cook beef with some Italian dressing mix and pepperoncini peppers and the juice and add bell peppers the last 30-45 minutes and serve on crusty rolls.&#60;/p&#62;
&#60;p&#62;We take ground beef and make loco moco - make burger patties and cook them and serve over rice with a fried egg on top and brown gravy.  &#60;/p&#62;
&#60;p&#62;We make Thai beef with ground beef too - the basic recipe is 2T each soy, fish sauce, and sugar with some garlic and hot chillies chopped up with a pound of hamburger and you add a big fistful of basil and a squeeze of lime at the end.  We bulk this out with veggies (bell peppers and zukes are a favorite) and serve with rice and a fried egg on top.  The same beef works wonderfully for lettuce wraps.&#60;/p&#62;
&#60;p&#62;We mix up ground beef with paprika, cumin, coriander, oregano, salt and pepper, and garlic and onion powders, massage it up really well, make it into a ball and stick it in the fridge overnight to chill and then pop it in the crockpot in the morning on low for 4 hours to make gyro meat!  Just pull it out, let it cool, and slice thinly for pitas or Greek salad.  We have done this in a skillet just crumbled too for fast gyros and it's just fine that way too and easy to change up from taco night.  We've even put it on pizza with red onions and mint with yogurt sauce at the end (no cheese unless you want it) over salad.  Or take the raw ground beef mix and put it on skewers to grill!&#60;/p&#62;
&#60;p&#62;Meatballs!  Make a neutrally seasoned all purpose meatball and bake off trays and trays of them.  Cool and freeze in freezer bags enough for one meal and grab and go.  Throw in a pot of sauce, make meatball subs, make BBQ meatball subs, Swedish meatballs or meatball stroganoff over buttered noodles, sweet and sour meatballs with pineapple and bell pepper chunks over rice.&#60;/p&#62;
&#60;p&#62;I like to braise tougher cuts of meat into an Italian style Sunday gravy and that freezes beautifully,&#60;/p&#62;
&#60;p&#62;We freeze spaghetti meat sauce and chili with beans and Cinci style beanless Skyline chili to top hot dogs with or make chili mac.  We freeze them flat in gallon bags and stack them up in the freezer.&#60;/p&#62;
&#60;p&#62;Pot roast and beef stew freezes well - just keep the potatoes a bit bigger bc they like to fall apart.  Beef tips and gravy is tasty. Salisbury steaks and meatloaves can be seasoned and frozen raw to thaw later and cook.  &#60;/p&#62;
&#60;p&#62;Cook up burger patties and make a Japanese curry of carrots, onions and potatoes.  Serve party over rice and pour curry over the top.

<description>&#60;p&#62;Help! I have a quarter beef in the freezer and a desperate need to do more crockpot/weekend prep/freezer meals. &#60;/p&#62;
&#60;p&#62;I've cooked a bunch of taco meat up and frozen it--I throw this in a skillet with some water and voila--tacos. My other go-to is french dips: throw a roast and a packet of french onion soup mix in the crockpot with some water and cook until tender. &#60;/p&#62;
