Mrs. Sunshine: Lol! It's funny how we don't like certain foods when they're raw/cooked, but love them the other way. I'm actually a little weird in that I like broccoli cooked or raw, but really don't like it all that much when it's reheated. I've actually gagged over it since I've been pregnant. Enjoy your stew!

@Astro Bee: I love them raw and anytime I've made a soup thinking that I won't taste them as much with all the other flavors I regret adding them. I've done it several times now and I'd like to enjoy my stew! lol

Turnip/rutabaga (whatever they call the yellow one in Texas!) is a staple of my beef stews, especially in winter. It maintains it's form well and is a good compliment to the potato. I also use carrots, celery and onion, and the combination of all those textures is a big hit.

My MIL doesn't like cooked carrots either, but she likes them in chicken soup and beef stew.

Parsnips would be the best sub. You can do green beans and mushrooms too! Carrots provide sweetness so look for something similar

Seriously, you can sub in any veggies that people put into soups. Broccoli and cauliflower came to mind immediately. You could also use corn, which has sweetness similar to carrot. Totally can use green beans, but I would add them later because I hate overly soggy green beans. I LOVE soups and stews!

I'm making a meal plan for next week and was thinking of making a beef stew. The recipe calls for white potatoes, peas and carrots. The problem is both DH and I loathe peas and carrots. I was thinking of subbing green beans for the peas but I don't know if that would even be good but I have no idea what to sub for carrots! Any suggestions?
