&#60;p&#62;You could use ground turkey instead of chicken, make a big batch, and have it as lettuce wraps one night and over rice with a fried egg a second night.  The kids also love it.

<description>&#60;p&#62;Sweet potatoes, onions and apples with pork tenderloin on top sprinkled with garlic powder, etc in the slow cooker. Shred the meat on top of the veg the first night, then mash all the veg together and spread into tortillas with the meat for quesadillas the next.

<description>&#60;p&#62;I make a double batch of stirfry ground turkey every week, use it for stirfry (with caulifower, kale, peppers) over brown rice one night, then for lunches throughout, usually as a &#34;taco bowl&#34; topping (over lettuce with tomatoes, onions and avocado and hot sauce).&#60;/p&#62;
&#60;p&#62;It's also good mixed into tomato sauce with some spinach over spaghetti squash (i mix it all together, put it back in the empty squash half, top with mozzarella and broil and it's so good). You can totally make and shred the squash ahead of time.

<description>&#60;p&#62;So not ground turkey specifically, but my favorite meals are a protein (usually marinated grilled or Instant pot chicken), Jasmine rice (seems to reheat well vs other kinds), and steamed/grilled/stir fried veggies. We take leftovers to work and this combination tends to not get old/boring as quickly.&#60;/p&#62;

<description>&#60;p&#62;I love to make Italian meatballs with ground turkey, and can make a big batch at a time.  I don't really have a recipe, but I bake them and usually use about 2.5 pounds of ground turkey, 3 eggs, seasoned breadcrumbs and spices in each batch, and then dump the whole batch into tomato sauce after they're cooked through.  That will make about 30ish small meatballs.  To really amp up the flavor, I'll add a pound of ground sausage to the mix - results in about 8-10 more meatballs too!  You can freeze any leftovers in or out of sauce, and just reheat when necessary.  &#60;/p&#62;
&#60;p&#62;We're good eating the same meal two days in a row, but sometimes we'll do the meatballs with pasta and caesar salad one night and on sub rolls with green salad the next.

<description>&#60;p&#62;We make this dish, which looks so weird and random, but its delicious and everyone eats it.  It also makes a huge batch so I freeze half for another day.&#60;/p&#62;
&#60;p&#62;Our tweaks are that we skip the pine nuts, and only use half the amount of beans called for (we just typically pick 1 kind of bean).  Our favorite version is with black beans and ground 93/7 lean turkey (I know the recipe calls for 1.5lbs, but one tray is about 1-1.3lbs and it works great).  I also use a cheese grater and add in shredded carrots and zucchini to tuck more veggies into it for the kids.  DH douses his in hot sauce and loves it.&#60;/p&#62;

&#60;p&#62;We also actually have come to prefer ground turkey for tacos.  We use McCormick CHICKEN taco seasoning (I don't know why that makes a difference but it totally does).  Generally what happens is we have tacos one night, which looks more like tacos for the adults, a meat and cheese quesadilla with a side of rice for DS1, and when DS2 was a baby, we'd just mush the rice and meat and veg together and we'd feed or he'd fist it along with a chip or two.&#60;/p&#62;
&#60;p&#62;The second time we have it its a taco salad or a &#34;burrito bowl&#34; where its all the same things in a bowl and everyone shovels it with chips.&#60;/p&#62;
&#60;p&#62;For the taco rice, I always buy/make Spanish rice but then add frozen corn and some black beans so its all in there in one thing.  &#60;/p&#62;
&#60;p&#62;Our favorite meatloaf is also turkey meatloaf (so weird, bc we love beef for just about everything else!)  My favorite recipe is from the Barefoot Contessa, but with shortcuts:&#60;/p&#62;

&#60;p&#62;First of all, you want to make 1/3 of this recipe (again, a tray of turkey is usually 1.3lbs).  We actually make 2/3 of a recipe because we love it so much.  Second, instead of making that onion relishy thing from scratch (which is a game changer for sure), I basically dump a big squirt of ketchup, Worchestershire sauce, dried chopped onion, dried thyme and broth in proportional amounts, and simmer in a pan for a few minutes until it looks like a thin sauce.  No need to wait to cool - just dump it in the bowl with everything else, stir up, and bake as directed.  We serve it with frozen green beans and a tub of store-bought mashed potatoes.  The second night we might mix it up and change the frozen veg and use a tub of mashed sweet potatoes with cinnamon sugar topping.

<description>&#60;p&#62;We make taco bowls with ground turkey all the time. I usually do ground turkey with homemade taco seasoning, sautéed bell peppers and onions, black beans, rice, etc then top with salsa, guacamole, lettuce, tortilla chips etc.&#60;/p&#62;
&#60;p&#62;Other things we have had lately that reheat well are A1 Meatloaf with veggies and mashed potatoes, baked sweet potatoes and bbq chicken with veg, and a jar of Aldi curry sauce over rice, chicken and veggies.

<description>&#60;p&#62;I like to make shepherds pie with ground turkey- bag of frozen mixed vegetables, a jar of turkey gravy, and browned ground turkey, topped with mashed potatoes or winter squash purée (google squashtastic shepherds pie for that recipe). Though be aware if you make it with the squash you can eat a ton of it and it might not make two meals. &#60;/p&#62;
&#60;p&#62;I like to put chicken breasts or thighs in the slow cooker and make different things- like chicken tacos one night and salsa chicken rice bowls the next night. Or cook in bbq sauce for pulled chicken sandwiches. &#60;/p&#62;

Also enchilada casserole is great reheated. I brown beef, turkey, or use shredded rotisserie chicken with some taco spices, black beans, and corn. Layer corn tortillas, enchilada sauce, meat mixture, and cheese in a 9x13 pan. I usually do 3 layers I think? Bake at 375 until bubbly.

<description>&#60;p&#62;Our meal plans work best with dinners that last for 2 nights (4-5+ generous servings and easily reheatable - it’s me, DH, LO1 who is 3 yo and not picky and then LO2 is 9 mo and eats almost all solids). But we are super burnt out of: lasagna, pot pie, baked ziti, soups, chili, etc. &#60;/p&#62;
&#60;p&#62;Anyone have any suggestions? Bonus points for recipe and if it uses ground turkey (because we have a ton in the freezer!).
