@Dahlia: thanks! I tried a different one from that site and subbed pecans and cranberries. Came out great! Almost cake like but held together for the most part. The girls liked it!

Pumpkin zucchini muffins are my go to for something homemade.

I used to make these oatmeal cupcakes too, but haven't in some time. I don't know why since they are really easy to make ahead. http://chocolatecoveredkatie.com/2013/01/08/breakfast-oatmeal-cupcakes-to-go/

Other quick, on the go things we do are string cheese, bel vitas, applesauce pouches, and a mix of Lara bars, nutrigrain type bars, or the TJ trail mix granola bars.

@regberadaisy: I have, several times. I didn't have problems with mush, it was pretty much cake texture. I used old fashioned oats and coconut milk instead of regular milk. Let me know how the applesauce goes if you try it!

@Dahlia: have you made this before? I made oatmeal bars before and it was mushy! I'm wondering if I can sub the pumpkin purée for applesauce instead. might try this tomorrow since I have everything.

@stiletto_mom: fruits are hard in the winter! Nothing is fresh and local so it's expensive fresh. And berries frozen then thawed tend to stain like crazy. Not to mention the 17 m will make a mess of most fruits. :/
But, I make a dozen hard boiled eggs at a time in the oven so I don't know why I never think of this alternative way to serve eggs in the car! All the protein without the cholesterol if I don't give the yolk.

You can bake muffins with pancake batter and stuff some breakfast sausage in the middle before baking. Or some semi cooked apple (nuke some peeled apple with cinnamon until slightly softened). You can add some flavored chips like butterscotch or cinnamon chips for sweetness in lieu of syrup. Or you can make pigs in a blanket with crescent roll dough and breakfast sausage and add a little cinnamon sugar to the dough before rolling them up. You can make quick smoothies with milk, banana, spinach, and a big blob of peanut butter and a touch of maple syrup or chocolate syrup or molasses if you want more sweetness. Or add berries for a PBJ shake.

Baked oatmeal? Kind of a cross between granola and a cake. You can make a big batch and heat up individual servings. I like this pumpkin pie one: http://www.budgetbytes.com/2011/09/baked-pumpkin-pie-oatmeal/
You can serve with milk or yogurt but I eat it plain.

I need some new ideas for breakfast on the run in the mornings. My kids usually eat pancakes or waffles and a yogurt and have been for a while. In a breakfast rut!

Needs to be easy to transport in the car and can either heat up at home and stay warm 10-15 minutes or no heat at all.
