@mrs. 64: you get sick from wheat? do you have celiacs? My SIL is like that. She gets IBS really badly if she eats any gluten, even a small bite!

@Mrs. Pen: Hmm. All she said is that she prefers to not eat wheat, but that she cheats sometimes so whatever we want to do is okay. Makes me feel like other grains are okay?

Fruit is a good idea though!

@daniellemybelle: I would assume though, that if she is wheat free she is likely mostly grain-free? Total guess. But that's what I encounter with most GF people. I was GF for awhile but it was ALL grains.

It's probably easier anyhow to use just one. She might even just appreciate a fruit spread!

@Mrs. Pen: Thanks! When I was Paleo-ing I baked with almond flour & coconut flour. However, I don't really care about starches & grains as long as it's a wheat-free recipe for our doula!

@mrs. 64: @daniellemybelle: I think that's a common misconception with GF. Most "gluten free mixes" use potato flour, rice flour and tapioca starch but that's not a whole lot healthier than wheat. It's still starches and grains.

I use almond flour or coconut flour. You can get only as much as you need at whole foods. Most of my recipes only use one or the other and they are delicious.

ETA: here is one of my favorite recipes using almond flour: http://www.hellobee.com/2013/01/22/paleo-coconut-cacao-cookies/

Or the best GF brownies you'll ever eat: http://wildheartfarm.org/2012/09/divine-wholesome-brownies/

@anbanan15: I second this recipe. I just use bobs red mill (cause it is all we have in town) and it is absolutely the best allergen free recipe. There is a link going around do ones made with chickpeas as well. It is chickpeas, nut butter, and a few other things.

to make your life easier, since this is a one time thing, i would suggest either the betty crocker mix or the pamela's cookie mix. SO much easier and cheaper than buying a million flours, and they both taste great!

I'm not much of a baker, so I don't do much from scratch but I can tell you that the Immaculate Baking Co. gluten free cookies are SO GOOD

http://www.immaculatebaking.com/category/gluten-free/

They have them in the refrigerated section of my local store. SUPER easy & very delicious.

agree with @mrs. 64: -- don't go for the Bobs - it's got a weird taste.

The hardest part about gluten free baking is that you need a combination of flours to make the taste/texture decent. I wouldn't go out and buy a bunch of flours if you are just making something for one occasion. The Betty Crocker GF chocolate chip mix is pretty good. I also like the King Arthur flour baking and cookie mixes (use them in place of flour in a regular recipe). I don't recommend the Bob's Red Mill All purpose because it tastes like garbanzo beans.

If you can find Enjoy Life Chocolate Chips, the recipe on the back for chocolate chip cookies taste just like, if not better than the real deal. That's the simplest and easiest to find recipe I can think of for you.

ETA: Here it is so you can use any chocolate chips if she doesn't have other restrictions (these can be pricey). You can also use regular shorten or butter if no dairy restrictions. Check out their website for a TON of other recipes that might work for you. We used a gluten free baking mix we make from variety of flours (I can get it for you if you like), but Bob's Red Mill has a gluten free mix that also works just as well.

I was recently looking for a good one and found this:

Our doula is coming over for our first prenatal appointment tomorrow. I asked if she has any dietary restrictions & she said she prefers to not eat wheat. I was hoping to make some cookies. I'm no master baker by any stretch, so I'm nervous to try a new recipe! Anyone have a tried & true wheat-free cookie recipe to share?
